EXÍMIA @eximiabar in São Paulo, Brazil is one of the most anticipated bar openings of 2024 and in just a few short months, has already been catapulted on the major Global Bar radars. Industry legend @marciojs has teamed up on the new project with renowned chef Manu Buffara and the Fullen brothers Nic and Gabriel. EXÍMIA Bar was born with the identity of valuing the Brazilian bar culture even more without directly presenting a Brazilianness cliché. The word EXÍMIA has a Latin origin, which means the constant search for perfection – reflected in the exclusive creations of the bar and kitchen through Brazilian plurality. The signature cocktail menu developed by Márcio was based on in-depth research into anthropology, originality and the history of vintage and classic cocktails, which, using natural and native Brazilian ingredients, were transformed into contemporary creations with balanced flavours. It is worth highlighting the filtrations made through the ingredients' fibre, which results in unique textures. The menu was developed by Manu Buffara, referencing his vast gastronomic experience in Brazil and around the world. In Manu's own words, the most significant influence on the development of the recipes was Márcio's cocktail style – the duo has worked together on global projects since 2012. The comfortable environment is divided into two floors, which are complementary and celebrate the rich Brazilian history, providing unique and memorable experiences. To create an intimate atmosphere, ambient music with Brazilian references and DJs will be played from Thursday to Saturday in the bar on the top floor.
