You know that moment when you find a new restaurant to try and it lives up to all your expectations??? Yeah...that’s @slackwaterpub 🙌🏽 I will be the first to admit, I don’t venture outside my bubble. I am definitely adventurous but one of my biggest pet peeves is mediocre food. I took my mom to lunch and we were looking for something quick in the Sandy area and what sold me about this place is that they had a pizza without marinara sauce! 🤣 Our food was amazing and it hit the spot! I cannot wait to go back and try more items on the menu (Oh and beer...Mama Rags doesn’t drink 😜). Image 1: Heavenly Hummus. This tahini black bean hummus was so tasty. It was a perfect blend of Tex Mex and Mediterranean flavors. Image 2: The Hulk. This pizza was EVERYTHING! One of the best I have had! It’s a little spicy and the green sauce base was perfect. I love pizza so I have a few faves. This is definitely one of them. I am craving it as we speak! Image 3: We also got burgers from @properburger this week. I have talked about them several times but we always get the El Mariachi and the Bollywood burger with the vegan patty. Restaurants we supported this week! Image 1: We got the fried cauliflower, fried Brussels Sprouts and cold vegetarian noodles from @chickqueen.ut We are big fans of Chickqueen and they absolutely make the best fried cauliflower, IM(not so)HO 🤣 I am a huge fan of Brussels Sprouts and the only way Aniket will eat sprouts is if it’s battered and deep fried! The cold noodles were great and yes, Utah apparently has cool noodle weather now! 🤪 Image 2: N and I got cupcakes from @citycakesslc for my Mom’s birthday. City Cakes is an absolute favorite when it comes to vegan cakes. My favorite is their vegan almond cupcake because I am sucker if anything almond. Their carrot cake is 💣. Image 3: This falafel from @ofalafelrestaurant is as OG as it gets for us! We have been getting falafel sandwiches from O’ Falafel for over 10 years and they make the best falafels. If you disagree we can’t be friends. I kid...but do? 😈🤣 Their falafel is always consistent. Perfectly crispy, very flavorful, and it just hits the spot! Venn Pongal Recipe 1 C Short Grain Rice 3/4 C of Yellow Split Moong 1/2 Tsp of freshly ground pepper 1 inch of fresh grated ginger 3/4 Tsp of Pink Salt For Tempering 1 Tsp of Cumin seeds 1/4 C of Raw cashews split in half 10-12 Curry leaves 1/2 Tsp of Peppercorn 1/8 Tsp of Asafoetida 2 Tbs of Ghee or Sesame Oil 1️⃣ Rinse your rice and lentils until the water runs clear. 2️⃣ Set your instant pot to sauté mode at medium heat for 10 mins. Add the ghee or oil, when the instant pot is heated. 3️⃣ Add the lentils and the rice. Sauté for 2-3 mins. Don’t burn the rice, you just want the grains coated with the oil. 4️⃣ Add the grated ginger, salt and ground pepper. 5️⃣ Add 5 C of water and cancel the sauté mode. 6️⃣ Put the lid on the instant pot, set it to manual at high pressure for 10 mins. 7️⃣ In the meantime, heat a small skillet or pan on the stove top. 8️⃣ Add 1 Tbs of oil or ghee. Once the oil is heated (~30 secs), add the tempering ingredients. Make sure that the cashews brown slightly and remove from heat. This is the best way to make sure nothing has burned. 9️⃣ By this time your grains should be cooked. Keep it at the “keep warm” setting of the instant pot for 10 minutes. At this point you can either release the pressure or let it release naturally. 🔟 Open the lid of the instant pot, add the tempering ingredients and mix well. Our Morning Chai Routine If you grew up in an Indian household, you had a morning chai routine. It is one the most personalized traditions and everyone makes their chai a little different. In our house, the hubs makes chai 95% of the time. His chai is simple, consistent, and very ritualistic. The 5% of the time I make chai, it’s spicy, creative, and ever changing. Just to get a little deeper, this also describes our personalities. Today, I want to bring you the deviated chai recipe in our household. Ingredients: 🫖 1-2 Tbs of loose leaf tea (Orange Peakoe or English Breakfast, feel free to use caffeine free) 3/4 C of water 1/2 C of Whole milk or Oat Milk 1-2 Tsp of Sugar or Honey Spices: 🍵 4-5 peppercorns 1 inch cinnamon stick 4 cardamom pods 3-4 whole cloves 1/2 Tsp of ginger powder Freshly grated nutmeg to garnish Methods: 🫖 In a saucepan, add the water, tea, and spices at medium heat. ☕️ Once the tea starts to boil, let it continue boiling for 1 min. 🫖 Turn the heat to simmer for 2-3 mins. ☕️ In the meantime, warm up your milk and set it aside. 🫖 Drain the tea into a cup and add your steamed milk. Happy Sunday Y’all! Moving forward, every Sunday I will be doing a weekly round up of the restaurants and treats we enjoyed. I figured this is the best for me to highlight local businesses. We don’t eat out everyday so these roundups will be realistic of my lifestyle. Hopefully it will be a fun series without being too overwhelming. Image 1: When I saw @spilledmilkbar at @instafoodiechef page, I knew I had to take N (Homo sapiens progeny). I must this this was a super fun and creative concept. I don’t eat cereal often but I do crave it once in a while. We all know how I feel about ice cream so this was a perfect combo. Their kids size is a very manageable portion of ice cream so I always appreciate that. Images 2 & 3: When @fig.eats posted the most incredible looking croissant on her page I knew I had to try @beaumontbakerycafe. Granted, this morning I was craving a savory breakfast so I am just going to have to go back for pistachio croissant. I love a good breakfast burrito and this burrito was what dreams are made of. If you don’t like avocado toast are you even from this world? The avocado toast was perfect with the microgreens and it didn’t fall apart! Smoked Tempeh Sandwich Ingredients 1 block of tempeh (sliced into strips) 1-2 Tbs of neutral oil 1.5 Tsp of smoked paprika 1 Tsp of cumin 1 Tsp of coriander powder Salt to taste 1 Tbs of vegan Wostcherie Sauce Bred of Choice Additional ingredient Opinions Pepper jack cheese Roasted beets Onions Crispy Brussels sprouts Dijon mustard Thousand Island Dressing Mashed Avocado For the Smoked Tempeh: 1️⃣ In a skillet at medium low heat, add the oil. 2️⃣ Once the oil is hot, add your spices and let them toast for 30-60 seconds. 3️⃣ To this add your tempeh and cook till it’s brown and crispy. 4️⃣ To finish the tempeh add salt and wostcherie sauce. You can add some water if you see the spices sticking to the skillet. 🥪 The star ingredients to this recipe are the tempeh, a good quality bread and a sharp Dijon mustard. 🥪 For the beets, I sliced them into thin circles and roasted them in the oven at 425 F for 15-18 mins. 🥪 For the Brussels sprouts I sliced them thinly, seasoned it with salt and pepper and roasted them at 425 F for 15 mins. Notes 📝 🫑🧅 You can be as creative as you want with this sandwich. I had a sandwich post for the day but I decided to post about something slightly more important... Just slightly 😜 Make sure to save and share this post! I got the first dose of the Moderna vaccine today and I feel privileged to be in the first group of people to get vaccinated. 1️⃣ Both are mRNA vaccines and very effective. 2️⃣ Pfizer is approved for ages 16 and older versus Moderna is approved for 18 and older. 3️⃣ You have to wait 3 weeks between shots for Pfizer and 4 weeks between shots for Moderna. 4️⃣ The Pfizer is 30 micrograms/dose and Moderna is 100 micrograms/dose. I got my shot at 11 AM this morning and I feel fine this evening. My arm is sore but I will take that any day over COVID-19. I will report any symptoms on stories so make sure to check back. Happy First Post of 2021! Are you tired of sticky sabudana kichidi? Try these hacks next time! 1️⃣ Always soak your tapioca overnight or for 6-8 hours. 2️⃣ Make sure to use a 1:1 ratio. If you are using 1 C of tapioca, soak it in 1 C of water. DO NOT add more water to the tapioca as it will get mushy. If you don’t follow any of the tips, make sure to follow this one! 3️⃣ Before your start cooking, mash a perl to make sure it’s well soaked. The center can be firm but it should not be hard. 4️⃣ If making sabudana vada, use a appam pan or pancake mold to skip deep frying. If you try these hacks, make sure to tag me! ❌GIVEAWAY CLOSED❌ I have never been a fan of resolutions. I think of the new year as a change in the Georgian Calendar, and that’s about it. Now, when I was younger I definitely cared about partying hard on NYE and then I’d go to the Atlanta Hindu Temple on New Years Day with the parents. 🤪🤣 Over the years I stoped caring about most things as one does so planing a night out specifically on NYE became a thing of the past. As for resolutions, never bought into it. If you want to make changes in your life it should happen year round. I don’t think new beginnings are meant to happen on a specific day. Personally, I like to self reflect often and make changes as needed. A ritual I do like is reflecting on the previous year. WFH in 2020 was hard for me. Although I saw some fantastic benefits, I truly missed seeing my coworkers. What helped the WFH blues was getting ready every morning. A quick 5 minute face made me feel like I was “going to work” instead of staying home. With the new year starting I did want to take a moment and appreciate all the support this community has provided. I had a small goal of reaching 1K followers this year and I am pretty darn close. You know those restaurants where you walk in and at the first glance of the menu you know exactly what you want. Technically, you want TWO things so your company must order the other thing you want. 🤣 I digress... @slceatery is one of the best brunch spots I have been to in a while (pre-covid included). It reminds me of restaurants I love to visit when traveling to the Bay Area or to Seattle. The Huevos Rancheros has to be the best I have had in ages. It was sheer perfection! The black beans were perfectly mashed, crisp tortillas and runny eggs that make yo dreams come true. (Side bar...does anyone remember Wild Grape on South Temple and E street? They had 💣 Huevos Rancheros...where my OG foodies at??) Next was the Breakfast Torta Dip. Now, if you have a vegetarian sandwich with a dip/jus, I am gonna order it! This was super tasty and the potatoes were out of this world. The sandwich was perfectly tucked (I HATE messy sandwiches), making them easy to dip in the salsa roja. The BIGGEST reason why this restaurant won me over was the portion size. Brunch can often be overwhelming and heavy but I left SLC Eatery feeling the right amount of full. This is an uncommon feeling while eating out so I want to recognize restaurants that understand the importance of portion size and health. If you haven’t tried SLC Eatery, you need to reevaluate your brunch choices ASAP. Since I am already on my sassy soapbox...I want to urge you to eat locally when possible. It is great news that we have a vaccine but please realize that the cultural (social and economic) shift caused by COVID is not going anywhere anytime soon. Spiced Christmas Cookies 🍪 🎄 Dry Ingredients🎅 3 cup of almond flour 1/2 Tsp salt 3/4 Tsp of baking powder 1/2 Tsp cinnamon 1/2 Tsp of cardamom 1/4 Tsp of ginger powder 1/4 Tsp of nutmeg Wet Ingredients 🎄 12 Tbs of maple syrup 6 Tbs of coconut oil 4 Tbs of almond butter Methods: 🍪 Preheat the oven to 350 F 🎄 In a large bowl combine all the dry ingredients and mix well. 🍪 Add the wet ingredients to the dry ingredients. 🎄 Use a parchment paper and some flour to roll out the dough and cut into shapes using Christmas cookie cutters. 🍪 Bake for 10-12 minutes and cool on a wire rack. 🎄After the cookies have cooled, top them with melted chocolate and fun sprinkles! 📝 When you roll out the dough I recommend using rice flour or any gluten-free baking flour. Sometimes we overlook the simplest meals during celebrations. Quesadillas make the most underrated holiday appetizers. Enjoy these as appetizers or a quick weeknight dinner. The tandoori masala adds a unexpected surprise and this dish comes together in minutes. Tandoori Sweet Potatoes Quesadillas 🫓🍠🧀 Ingredients: 2 Tbs of Tandoori Masala (@shanfoodsglobal) 3/4 Tsp of salt 1 Sweet potato cubed 1 C of frozen corn 1 Can of Refried beans (@amyskitchen) Tortillas or Rotis Chopped cilantro for garnishing Cheddar cheese (@tillamook) Oil or butter for cooking Methods: 🌽Preheat the oven to 425 F. 🍠 In a baking tray add the corn and sweet potatoes. Toss with oil, tandoori masala, and the salt. Roast the veggies in the oven for 20 mins. 🧀 Take a tortillas and spread the refried beans. I may not have holiday deserts down but I definitely know how to mix a drank! 😜 Spiced Cranberry Bourbon Smash Ingredients: 8-10 cranberries 1.5 oz bourbon 1 oz spiced maple syrup 1-2 Rosemary springs Seltzer water Spice Maple Syrup Ingredients 1/4 C maple 1 C water 4 cloves 1 cinnamon 🎄In a saucepan, heat the maple syrup, water and spices. Bring this to a boil and let it reduce to half the quantity. 🥃 Let the syrup cool down before making your drink. 🎄Muddle 8-10 cranberries in a glass 🥃 In a cocktail shaker, add bourbon, spiced maple syrup mix, rosemary. Shake Shake Shake! 🎄Pour over ice with the smashed cranberries.
