Cookie Dough Bark with Fudgy Crispy Quinoa Chocolate Topping: 1 cup almond flour 3/4 cup oat flour (GF if desired) 1 cup almond butter (I like TJās raw creamy almond butter) 1/4 teaspoon fine salt 1/4 cup pure maple syrup 1 teaspoon vanilla extract 1/4 cup mini vegan chocolate chips optional: 1-2 scoops of your favorite protein powder (mix everything together in a bowl... transfer to a parchment lined baking sheet + place another piece of parchment overtop to spread it into one even layer. set aside). 1 cup vegan chocolate chips (I use @hukitchen chocolate gems which melt perfectly and are refined sugar-free - code ELAINE20 for 20% off) 1/2 cup crispy quinoa (or sub crushed up rice cereal but do not use toasted quinoa or puffed quinoa here) 1/4 cup almond butter melt the chocolate (measures 1/2 cup when melted) and stir in the crispy quinoa and almond butter and then pour over the cookie dough layer. Add flaky salt if desired and freeze until solid. Then break it up into whatever sized pieces and enjoy! PANTRY ORGANIZATION TIPS (containers linked in @eatingbyelaine bio or DM @eatingbyelaine for the link) I cannot even begin to tell you the huge difference our pantry reorganization has had on our lives from better meal planning to more efficient cooking to reducing our food waste (and grocery bills!) - the results are in and itās officially life changing. š¤ In addition to grouping like items together, labeling the pantry and food containers - here are 3ļøā£ more things we do to keep our pantry well organized: 1ļøā£ Maintain a back-stock area for bulk items or frequently used items. Rotate your stock as needed and bring older items to the front of the pantry. Be sure to check the back-stock area before you make your grocery list to avoid buying more of what you may already have. This has drastically reduced our food waste and our weekly grocery bills. 2ļøā£ When refilling food storage containers, place the new ingredients at the bottom of the container and then top-off the containers with the older ingredients so that gets used up first. This helps prevent spoilage. 3ļøā£ Use a vacuum sealed system to extend the shelf life of your food, keep it tasting as fresh as possible, cut down on food waste and save money. All of my favorite veggies are here in this dish, and when tossed with penne pasta and a creamy lemon sauce itās the perfect dish to satisfy a pasta craving. A creamy lemon sauce (similar to my Pasta al Limone) infuses this dish with creamy, comforting brightness thatās just *chefās kiss* perfect. The starch thatās cooked out of the pasta (itās what makes the water look white/cloudy!) helps the lemon sauce blend to a perfect, creamy finish. Blended with a cup of reserved pasta water, garlic, a splash of pure maple syrup, and salt and pepper, it creates a creamy, flavorful sauce that turns this into a restaurant-quality dish.
It turns out that making your own vegan mozzarella is surprisingly easy and the results are so much better than the vegan cheeses Iāve found in the store. My absolute favorite way to enjoy this mozzarella is on pizza, but I think youāll find that itās delicious any way you use it. The base for this vegan cheese is cashews, which I use and love all the time in creams and sauces. They offer plant-based protein and are considered an excellent source of copper and a good source of magnesium, manganese, vitamin K, phosphorous and zinc.
