Overnight Oats 5 ways! Quick and easy midweek breakfast ideas perfect for lighter mornings. Overnight oats are a great midweek breakfast. Minimal prep (like 3mins) and full of oats so you and the kids stay full for longer. Just make them the night before, chuck them in the fridge and enjoy them for breakfast the next day. Which one are you choosing? We have: 1. Mango and Coconut 2. Apple, Raisin and Cinnamon 3. Blueberry and Peanut Butter 4. Strawberry, Basil and Yoghurt 5. Raspberry, Cocoa Nib and Coconut For each serving add around 80g porridge oats to a glass. Add a tablespoon of chia seeds and a squeeze of honey (or maple syrup) followed by: 1. A third of a mango, peeled and diced and a tablespoon of desiccated coconut 2. Half a grated apple, a tablespoon of raisins and a teaspoon of cinnamon 3. A handful of blueberries and a tablespoon of peanut butter 4. A handful of sliced strawberries, a teaspoon of dried basil and a tablespoon of greek yoghurt 5. A handful of raspberries, a teaspoon of cocoa nibs and a tablespoon of desiccated coconut Top up with coconut milk until everything is covered. Give it a stir (if it feels dry add more coconut milk), cover and leave in the fridge overnight. Before serving top with fruit The mango coconut one was my favourite! Quick and healthy family-friendly Shakshuka! This simple, delicious and nutritious family dinner is quick to make and made with British Lion eggs. Available in all major supermarkets, look for the red British Lion mark to guarantee the highest food standards. At this time of year, I want super simple, cost-effective dinners that my family can tuck into, and there’s none better than shakshuka in my opinion. Eggs are high in protein and nutritionally dense and I’m also adding in healthy vegetables and pulses too. Win win! Here’s the recipe and remember, for more egg-based recipes head over to @egg_recipes Ingredients 1 British Lion egg per person 1 small onion, diced 2 cloves of garlic, crushed and diced 1 pepper, diced 2 carrots, peeled and diced 1 400g can of cannellini beans, drained 1 teaspoon each of dried oregano and basil 250ml vegetable stock 1 400g can of chopped tomatoes Olive oil, salt and pepper Method 1. Using a wide frying pan gently fry the onion for three minutes in  splash of olive oil with a pinch of salt.   2. Add the garlic, peppers, carrots and herbs and cook for a further 4-5 minutes. 3. Add in the beans, followed by the stock and chopped tomatoes. Cook for a further 7-8 minutes until the sauce thickens.   4. Make small wells in the pan using the back of a spoon and crack a British Lion egg into each. 5.
