Quick and healthy family-friendly Shakshuka! This simple, delicious and nutritious family dinner is quick to make and made with British Lion eggs. Available in all major supermarkets, look for the red British Lion mark to guarantee the highest food standards. At this time of year, I want super simple, cost-effective dinners that my family can tuck into, and there’s none better than shakshuka in my opinion. Eggs are high in protein and nutritionally dense and I’m also adding in healthy vegetables and pulses too. Win win! Here’s the recipe and remember, for more egg-based recipes head over to @egg_recipes Ingredients 1 British Lion egg per person 1 small onion, diced 2 cloves of garlic, crushed and diced 1 pepper, diced 2 carrots, peeled and diced 1 400g can of cannellini beans, drained 1 teaspoon each of dried oregano and basil 250ml vegetable stock 1 400g can of chopped tomatoes Olive oil, salt and pepper Method 1. Using a wide frying pan gently fry the onion for three minutes in  splash of olive oil with a pinch of salt.   2. Add the garlic, peppers, carrots and herbs and cook for a further 4-5 minutes. 3. Add in the beans, followed by the stock and chopped tomatoes. Cook for a further 7-8 minutes until the sauce thickens.   4. Make small wells in the pan using the back of a spoon and crack a British Lion egg into each. 5. #ad Come on a morning hike with us! Life with three young kids is definitely chaotic, but it's a lot of fun too. One of our favourite things to do is to all get outside each day, burn off some energy and have fun. To keep us all going, I'll always pack some Nature Valley Crunchy Bars, made with 100% wholegrain oats. #ad Here's a quick post school snack idea the kids will love. Banana and chocolate chip muffins, smells so good and so quick and easy to make. I'm using British Lion eggs which are available in every major supermarket and guarantee the highest food standards. Heat the oven to 170 and line a 12 hole muffin tray with cases. Sift together 250g self raising flour, 110 g caster sugar, 1 tsp baking powder, half a tsp bicarb of soda and a pinch of salt. In a jug mix together 75g melted and cooled butter, 2 mashed bananas, 2 British Lion eggs and 125 ml milk. Pour the liquid over the flour mix and stir. Add a pack of chocolate chips, stir again then divide into the muffin cases. Bake for 20-25 mins then remove and allow to col. That's it!
