This Radicchio Salad with Green Olives, Blue Cheese, and Candied Walnuts is one of my favorite ways to enjoy radicchio. Strain the water, spin in a salad spinner (if using), and then use a clean kitchen towel to fluff dry the remaining water as best as you can. I find that Gorgonzola is a good option for those who may sometimes find the blue mold flavor of blue cheese overpowering as it tends to be somewhat milder in Gorgonzola, but is still sharp and nicely salty. This Radicchio Salad with Green Olives, Blue Cheese, and Candied Walnuts can be made friendly for gluten-free, grain-free, vegetarian, and low-FODMAP diets.

Roasted Greek Potatoes with Whipped Feta

These Roasted Greek Potatoes with Whipped Feta are twice roasted, first in a drizzle of olive oil, garlic, oregano, red pepper, and salt, and again after they’ve been bathed in a vibrant lemon broth. I prefer to use Greek block feta in brine to make the whipped feta for this recipe when possible. This Roasted Greek Potatoes with Whipped Feta recipe can easily be friendly for gluten-free, grain-free, vegetarian, and low-fodmap diets. For Low-Fodmap diets, you’ll want to utilize garlic-infused olive oil in place of garlic powder, lactose-free yogurt in place of traditional, and make sure that the seasoning in your chicken broth does not include any high-fodmap ingredients such as garlic or onion.

Meatball and Ricotta Pizza

Let’s talk about the meatballs for a moment My recipe for meatballs will make 18 meatballs, twice as many as you will need for one Meatball and Ricotta Pizza, but perfect for two pizzas (or to repurpose for leftovers). I prefer to use this Easy Same-Day Pizza Dough recipe to make this Meatball and Ricotta Pizza, but if you have a preferred pizza crust recipe of your own or want to grab some pre-made dough from the store, feel free to use those as well.

Smoked Salmon and Citrus Salad with Cucumber and Avocado

Tender smoked salmon is layered with a variety of fresh grapefruit and orange, thin ribbons of English cucumber, and creamy sliced avocado, then drizzled with olive oil and a generous measure of flaky sea salt.
