Expo East 🤩 There were SO many new products on the expo floor last week in Philadelphia, PA! 🙌 . This is the largest convention for natural products & foods, but being that this was my first time attending, I had no idea how big it was actually going to be!! ✨️Gluten-Free Focaccia 🤤 Perfectly crisp on the outside, soft & chewy on the inside 🥰 This bread is perfect for beginners! I used @kingarthurbaking measure for measure gluten-free flour, and infused my oil with fresh garlic cloves to take the flavor to the next level 🙌 . School is back in session 📚✏️and today I'm making my kids homemade uncrustables on @schargutenfree Deli Style Bread 🤩 . I spread on some almond butter & jelly then used a sandwich press that cuts and seals the bread. You can definitely make a bunch of these at a time and freeze! For the first time since creating my IG account, this isn't my food...and these aren't my pictures! Ever since Cassidy was diagnosed with Celiac, I didn't want her missing out. I didn't want her missing out at school parties, on her friends yummy birthday cakes, my aunt's Christmas cookies...it made my heart hurt each & every time, and when she left for college a few weeks ago, I wondered how she was going to make it at Penn State where tailgate parties and allllll the food is your Saturday afternoon pastime with 107,000 other people 😳 I didn't want her to miss out on this experience. . So a few months ago, I joined "Gluten Free College 101" FB group run by @baltimoreglutenfree 🙏 It has not only been so informative, but I connected with @jersey_debbie who invited my daughter to join their family for a #glutenfree spread during the first football game 💙And she not only invited my daughter, she opened this invitation up in a Penn State group welcoming any child with Celiac Disease who needed a meal to join their family 🥰🙏 . Yesterday, I was ugly crying happy mom tears as I received a picture from this complete stranger of Cassidy and her friends at their 100% GLUTEN-FREE PENN STATE TAILGATE PARTY 🙌 📸pics from breakfast to dinner ⬆️🤩 . Bacon 🥓 Wrapped Jalapeño Poppers 🔥Bringing back one of my all time favorite apps for football season 🏈 Don't be scared about the 🔥if you don't eat jalapenos often, scooping out the jalapeno seeds and ribs keeps this delicious snack mild, but if you like more heat go ahead and leave some of it in there! . Recipe ⬇️ About 16-18 jalapenos(make a lot, these go quick!!) 8oz softened cream cheese(you can easily swap dairy-free!) 1 tsp cumin 1/2 tsp chili powder Bacon slices cut in half . Cut each jalapeno in half lengthwise, scooping out seeds and ribs. I like to use rubber gloves to do this! Mix spices with cream cheese then fill each jalapeno. Wrap in a slice of bacon then place on a baking sheet with a rack. Bake at 425 for about 25 minutes.
