TONKOTSU RAMEN 🍜 I’ve been feeling a little bit down lately (for obvious reasons!) so when my friend @mysticlilith asked if I wanted to pop around and collect some of the tonkotsu ramen she made under the tutelage of @matsudairamen (with distancing), it really made my day! After building my ramen, I was faced with the impossible task of capturing the perfect shot before sampling a single morsel - a challenge that never seems to get any easier no matter how many times I do it! A creamy pool of umami-laden pork bone broth engulfed a mound of homemade ramen noodles, topped with salty-sweet chashu (braised pork), soy-marinated soft-boiled egg, sesame seeds and spring onions. Drool! After running a series of sell-out local pop ups, self-confessed ramen geek, James Chant of @matsudairamen confirmed a seven-week residency at Cardiff’s @bluehoney.local, just before COVID-19 struck and he was forced to shut shop. Now, he’s planning on delivering his highly acclaimed ramen in the form of frozen meal kits containing everything you need to make your very own ramen from the comfort of your own kitchen including broth, tare, oil (combined) and noodles, with toppings like soy-marinated egg and chashu pork available at an additional cost. The kits will be available on a trial run from around 8th June. They are currently priced at £7.50 and you can opt to include a soy-marinated egg for £1 and/or chashu pork for £1.50. They will be available both for collection and for delivery within the Cardiff area at a cost of £3. Keeping it simple again today with a slice (or slab, should I say!😂) of @princes corned beef and potato pie with @heinz_uk baked beans. I made this a few days ago and warmed up the leftovers for lunch today. This is a classic British pie and it’s so easy to make (although I’ll admit I used @jus_rol ready-rolled pastry!)
