I was actually aiming for a burger bun, and these AIP English Muffins can definitely moonlight as a bun or roll, but their texture is very English Muffin. I love using whole ingredients in baking and plantains, specifically green ones have a lot of benefits like prebiotic starch. * AIP baking powder which consists of equal parts cream of tartar, baking soda, and arrowroot starch sifted together. Use a spatula to scrape all the of the plantain mix into the bowl with the flour mix and tilt the bowl with one hand while you fold with the other.
Not that white potatoes aren’t a perfectly healthy food, but this version uses cauliflower, white sweet potato, kale and anti-inflammatory fats. * Japanese sweet potato is the white brother of regular sweet potato, less sweet, more starchy. * Add the coconut cream and palm oil to to the cauliflower and use a whisk to cream. Hot it’s like mashed potatoes, cold it’s like potato salad.

I use this AIP compliant Baking Powder you can make your own by sifting together equal parts: baking soda, cream of tartar, and arrowroot starch. Put them flat on a plate and give them 30 seconds and as it cools just a little bit they get super crispy.

Yesterday I picked up my first weight in 3 weeks. Since we drove down to Tampa at the end of March, I haven’t had time. Our new routine is just enough so I can get my work done, Jack’s home schooling, make meals and get some outdoor time. My saving grace has been lots of walks for Bruce. Making an effort to get 10K steps a day at minimum. But finally after a good nights sleep, I woke up craving my #kettlebell and had the time for it too! #sundayfunday I kept it short and sweet bc they felt heavy AF. And I’m going to try and fit in lifting on the weekends, even if it’s a little bit. Learning that #workouts don’t always have to be all out is a new thing for me lol Today I did 20 reps, 3 sets: 30# kettlebells swings Goblet squats Bicep curl to shoulder press Resistant band on my thighs the entire time. Finishing the day at about 13K steps over all. Striving for consistency over perfection and navigating this new normal is how I’m staying sane and healthy 💕 That and living out my #hgtv home building dreams 🤣 Just call me #joanagaines 🙌🏽
Testing out exterior color combinations for our house. It’s been amazing being a stones throw from the construction. Windows were put in last week, and the roof today. I’ve been sharing the process on stories the last few weeks. It’s coming together so fast and the entire process is elating. We’re really pleased with @vikinhomes and can’t wait to see the end result. The house color will be that dark teal Ocean Abyss. The two accent colors on top are (left) Juniper Berries and (right) Tidewater. The white trim color is Coconut Twist. These are all @behrpaint 😍 The wood stains, which will be for the porch roof, front door and fence, are (left) golden maple and (right) Sedona Oak. Our home will be a 1 story Craftsman Style Bungalow. They historically have 3-4 colors on the exterior and lots of personality! I’m so torn! I think definitely the golden maple for the wood, and I love the Ocean Abyss and Coconut Twist. But between Tidewater and Juniper Berries it’s a hard pick!
