I’m a gluten free home cook who specializes in global cuisine inspired by dishes from my childhood and travels. I was diagnosed with Celiac Disease in November 2019, which made me change my lifestyle and start a gluten free diet. My goal with starting my page Plating with Perel is to help raise awareness for Celiac Disease and show gluten free food can be tasty.

What’s the capital of Thailand? It’s Bangkok and time for a Thai Chicken Salad. This is something I’ve eaten at restaurants and bought at Costco before. A mix of greens and cabbage, loads of veggies, chicken, rice noodles, peanuts and sesame seeds for crunch, all finished with a vinaigrette. Soak chicken for 10-15 mins. Preheat oven to 400 degrees and place on cookie sheet. Roast for 30 mins. Let cool a few mins then slice. Combine lime juice, olive oil, rice vinegar, ginger, crushed red pepper and sugar. Set aside. Combine cabbage, romaine, carrots, cucumber, rice noodles and cilantro in large bow. Add chicken and peanuts. Toss and garnish with sesame seeds. Drizzle vinaigrette over the top.

Who likes a fish dinner? Let’s make Salmon Cakes then. Salmon is healthy for you and is rich in Vitamin D. I love to make this recipe because it is more than just a pan seared piece of salmon. Flaky, flavorful and crispy on the outside while soft on the inside. I served it up with white rice and a chickpea salad. Form into 8-10 patties. Heat thin layer of oil in nonstick skillet over medium heat. Cook salmon patties in batches, cooking for 3-4 mins per side until golden brown and crispy on the outside. Repeat until all salmon patties are cooked. Serve salmon cakes with white rice and chickpea salad.

Pancetta, sausage, loads of mascarpone and Parmesan, tomato sauce all tossed with a nice gluten free penne. Parlez vous français? One of my go to dishes when I lived in Paris was Steak au Poivre, which is steak with a peppercorn sauce. It was easy to make with a cheap cut of beef and the sauce was packed with flavor. I served mine up with Smashed Potatoes and Buffalo Cauliflower for a well balanced meal. Season steaks with salt and pepper on both sides. Grill to desired temperature. Heat olive oil in saucepan over medium. Sauté shallot and garlic for 3 mins. Stir in butter and cornstarch to form roux. Add cream, beef broth and chives. Bring to a boil stirring to incorporate roux. Season with salt and lots of pepper. Once boiling, reduce heat to simmer cooking 1-2 mins for sauce to thicken. Serve steak and top with lots of sauce. Serve with potatoes and cauliflower.

What is one dish you grew up on? One for me is Stuffed Peppers, which my mom would make on a regular basis. Only a handful of ingredients: meat, rice, veggies, tomato sauce, spices and cooked to perfection where the pepper is Al dente and the top is crispy. Then, the inside is flavorful, soft and I want to go in for another spoonful. Heat skillet with oil over medium. Brown ground Turkey for 6-7 mins until cooked through. Stir in onion, celery, and spices plus hot sauce cooking 2-3 mins. Remove from heat and stir in rice and tomato sauce. Mix well and stuff the peppers. Broil for 6-8 min until peppers are slightly charred and top is crispy.

How does Steak Salad with Focaccia Croutons sound? To me, that’s a bomb healthy steak dinner. This is all courtesy of @whatsgabycookin latest cookbook, and I utilized GF focaccia instead of regular. Easy to make with arugula, veggies, steak, focaccia and a nice vinaigrette to finish it off. The subtle flavors of the toasty focaccia plus Aleppo pepper on the steak was delicious. Marinade for one hour. Combine cabbage, vinegar and sugar. Set aside. Heat grill. Cook shrimp for 5-6 mins flipping halfway. Top tortillas with shrimp, slaw, cheese, guacamole, and spicy ranch. Serve.

Who loves an island getaway? I grew up going to the Caribbean on cruises and island hopped from place to place. One food I always look for when I’m there is Fish, and what better than a Caribbean Fish Sandwich. Marinade fish for 30 mins. Combine mayo and hot sauce. Combine cabbage and vinegar. Heat grill and cook fish for 3-4 mins per side. Place fish on bottom bun. Spread mayo on top bun. Add slaw, avocado and tomato. Put sandwich together.
