Diamondback 2oz Rittenhouse .5oz Laird's .5oz Yellow Chartreuse I'm trying to make the most out of my home bar before moving to Amsterdam, so this recipe was a good excuse to dust off 3 of my favorite bottles for one drink. 👌

Daiquiri 2oz Plantation 3 .75oz lime .75oz cane syrup Fuckin' bliss. As always, shout out to @cocktailemporium for the glassware.

Taking the biscuit for "most pretentious thing I've ever done" is this photo of my homemade pandemic hooch, in my official @tekuglass. All things considered, this is a pretty tasty brew. It presents, to me, a lot like a sour. Here's a rough guide to how I did it, in case you, too, would like to become a hooch connaisseur. What you'll need: 1 gallon Homebrew jug with air lock 2 litres tropical juice 2 litres pineapple juice 5g champagne yeast 1 litre full fat milk 1 lemon What I did: I had heard horror stories of people trying to ferment juices that weren't clear to mixed results, apparently the yeast doesn't interact with it well. So! I clarified the two litres of pineapple juice by curdling full fat milk with the juice of one lemon, then straining the pineapple juice through the curds and a layer of cheesecloth. I passed the tropical juice through cheesecloth too, but I didn't run it through the curds cause it really didn't want to go through the curds and I'm not a bully. Next I put the juice mix in the jug, filled the airlock with vodka instead of water cause I was really worried about bugs (the juice mix is very very sweet). I brought the wee yeasts to life in some warm water for 20mins then threw them in with the juice mix, setting the airlock on top. I popped the jug in a dark cupboard and forgot about it for 5 days. Finally, after a mad panic to get my sticky paws on some swing top bottles, the generous humans at @borrelto gave me some @grolsch_ca bottles they were finished with, and I could bottle the fermented mix so that it could carbonate. beautiful teku glass courtesy of the good folks at @cocktailemporium in case any of you are on the lookout for one.

My wife commissions me to make peculiar drinks, and I don't hate it. S/O to my buddy @mcnicolmakes for the inspiration behind this, my first balcony beverage of the season. CRASS CUCUMBER CONCOCTION 2oz tequila 1oz lime 1oz agave 3 slices cucumber to muddle Literally all the cucumber ever diced Muddle cucumber slices with lime and agave, add tequila, shake, strain over literally all the cucumber finely diced, and ice.

Wee special moment for me here. Today I picked up my order at work, and in the bag was this wee card. You might notice on the top left hand corner there's a wee recipe from me. It's unpretentious, accessible and tasty, and I'm really proud of it and what it says about my philosophy as a bartender. I never would have thought when I first started shopping at @cocktailemporium that I'd ever make it onto one of these cards. I still have the card from my first ever visit which I hid safely away in a copy of Regarding Cocktails promising myself that I'd get my chops up and the secrets it held would be revealed to me in time. It feels really poignant to have this wee high in my bartending career come from the people who first sparked my bartending imagination. If you've never been in the stores, grab yourself a gift card online now (cause they deserve your support) and come and spend it on the other side. It's a certain kind of magic.

To quote my wife, "I was today years old when I found out champagne can just BE YOUR DRINK!" For all you novice tipplers (or expert tipplers) out there who need to hear this, your drink can be ANYTHING. If you want to drink champagne, you fire away! And if your wallet won't let you, a wee bit spumante never killed anyone. STRAWBERRY BELLINI Stick 6 strawberries in a blender Add 4oz simple syrup Blend Strain through a mesh strainer cause strawberry seeds are a nightmare Toss roughly 1oz of your lovely syrup in the bottom of your flute Top with *Champagne (*Spumante, it's a fucking pandemic.) #stayhomecocktailclub

When I first immigrated to Canada I thought that casseroles were exclusively made with the left overs from other meals. Needless to say, I spent my first few years here bewildered by the abundance of casseroles sitting pride of place on the potluck table. Why were Canadians unashamedly serving leftovers to guests?! Turns out casseroles have nothing to do with left overs, I'd completely made that up. They're just anything you cook in one dish. Anyway, here's a drink: PIMM'S CASSEROLE 4oz Pimms 1oz Brandy Throw the liquor in a 1L Mason jar, fill with ice, top with whatever soda you think is the tits, and all the fruit you've got in the fridge. *chefs kiss* Mine has cranberry ginger ale, raspberries, lime, cucumber, grapes.

THE STAYCATION 1oz @rumchataofficial 1oz @havanaclub 3 (or sub any dry rum) .5oz lime juice 2oz pineapple juice Shake. Serve over crushed ice. Ok, I've cranked the radiators, I've shaved the cat, I'm wearing my most tropical romper (which I made btw @houseofglass.clothing), and I'm serving up my most tropical drink! Hung out with the absolute nicest guests at the bar this morning. They offered to take my photo with this drink because I was so proud of it (#thatwashlinethough), here I am looking as photogenic as ever, wasting their generousity.

Representing #Scotland today with this #auldalliance cocktail. 2oz Scotch 1oz lemon .75oz cassis .5oz simple .75oz egg white Orange bitters Shake. Double strain. Serve in a coupe with a maraschino cherry garnish.

Shamefully late with my #cincodemayo post, but here's a nice classic margarita I threw together for a guest today. 2oz @casamigos 1oz lime .5oz @cointreau .5oz agave Shake. Strain. Serve with a salt rim.

Trying my hand at #sorrel tonight in homage to my good friend @younganimalto who brews a killer and authentic sorrel available at @laylowbar. While mine is a definite bastardisation, I'm excited to sip this bad boy on the balcony with a couple of ounces of rum thrown in for good measure.
