Hi! My name is Melissa, and I'm part of the gluten free blogger community on Instagram! I was diagnosed with Celiac Disease in 2009 and IBSc in 2020, and have been on a mission to make my stomach happy ever since!
One of my favorite things in the world is finding new gluten free products, and I love promoting them with my followers! I have a number of favorite brands (Schar, Feel Good Foods, Ian's, Udi's, Glutino, Goodie Girl. and Canyon Bakehouse to name a few), and I have proudly participated in collaborations with a number of other restaurants and brands! I also like to create my own recipes, and am always trying to create something new and fun to have for dinner! I am lucky to call Central Massachusetts home, and even luckier to call London my second home, as I travel there quite a bit to see family and friends!

Also like, go to @taverninthesquare for brunch on a Sunday — ASAP. I hiiiiiiighly recommend. The yummiest GF options, the kindest staff, and the tallest mimosa towers you’ve ever seen.
𝙂𝙡𝙪𝙩𝙚𝙣 𝙁𝙧𝙚𝙚 𝙋𝙪𝙢𝙥𝙠𝙞𝙣 𝘿𝙤𝙣𝙪𝙩𝙨 🎃 It’s that time of year again! @traderjoes officially has gluten free pumpkin everything, and I am HERE FOR IT. I made these delicious cake-like donuts out of their ‘Pumpkin Bread & Muffin Baking Mix’ and they are g o o d. They’re truly the perfect way to welcome spooky season, aka autumn! 🍁🍂🎃👻 Ps — use coconut oil for the oil part of the recipe, and I promise you they will stay yummy and moist until you eat the very last bite of the very last donut! 🥥

𝙤𝙝 𝙝𝙞, 𝙃𝙐𝙎𝘽𝘼𝙉𝘿 ♥️💍 | 07.07.2021 the secret’s out and I obviously have to share it with you guys too! on the most stunning of summer days, we committed to forever and finally became husband and wife. after 3 cancelled weddings, 3300 miles of distance, and unchanged travel bans, we found a way to make the sweetest lemonade out of the most bitter lemons — and it was truly the most incredible day of our lives. we cannot wait to celebrate our love story with all of our family and friends next October, and are so looking forward to all of the amazing things to come. we are so thankful for all of the unconditional love and support from everyone this past year and a half — we truly wouldn’t have gotten to this point without you, and we love you so incredibly much. and finally, to the most amazing future sister-in-law in the entire world, our lives have changed forever for the better, because of you. thank you for making this possible for us, we love you!

𝘉𝘦𝘢𝘤𝘩 𝘸𝘢𝘷𝘦𝘴 & 𝘣𝘢𝘳𝘦 𝘧𝘦𝘦𝘵 ☀️🌊 Thinking back to one of my favorite days of 2021, when I spent the day with two amazing friends who let me walk through the sand, kick up the water, and check an item off of my bucket list. I’m just so incredibly thankful for this day. The past 18 months have taught me so much. They’ve taken things from me, they’ve given me some amazing opportunities, they’ve broken my heart, and they’ve reminded me of what’s truly important. And you know what? I’m thankful. I’m thankful for what I’ve learned, thankful for what I continue to learn, and thankful for the person I’ve become. I know I’ve been a little quiet on here the last week or so, but I’ve been reflecting, planning for the future, working in a new position I love, and missing Conan like crazy — BUT, I promise to start consistently showing up again because I really love you guys, and this little community is one of the greatest parts of my life 💙✨
ᴠᴇɢɢɪᴇ & sᴀᴜsᴀɢᴇ ᴋᴇʙᴀʙ sᴛɪᴄᴋs ☀️🌱🍅 I made these little beauties back when it was sunny and warm outside (ahem, you can seriously stop with the weird summer storms and tornadoes and hurricanes now, New England), and absolutely LOVED how they turned out! When I made meat & veggie kebabs sticks, I typically use chicken, halloumi, onions, and peppers. BUT, these ones were part of a let’s-use-what-we-have-in-the-house-right-now creation — we all know how that goes 😂 The deets: 🍎 + chicken apple sausage 🧀 + sliced halloumi 🫑 + yellow & orange bell peppers 🍅 + grape tomatoes I baked them in the oven on 350° for ~20 minutes, after pre-cooking the cut veggies (except tomatoes) and sausage pieces in a sauté pan. I served them over some fresh salad greens and threw a drizzle of @nandosusa medium peri-peri sauce on top! They were DELISH!
𝒫𝓇𝒾𝓃𝒸𝑒𝓈𝓈 𝒫𝒶𝓃𝒸𝒶𝓀𝑒𝓈 👑🥞 Can you even deal with the fluffiness of these pancakes from @bubbies.and.peaches?! I know I can’t, and it was honestly magical watching the mix rise on the skillet! Inspired by their kiddos, @bubbies.and.peaches wanted to create a ‘breakfast fit for a princess,’ and boy, do I think they were successful! These are a healthy, 5-ingredient only pancake option, plus they are SO FLUFFY (if you just pictured the little girl from Despicable Me saying that, that’s e x a c t l y how I meant it, ha!!)
