I am a mom of two and wife to a martial arts school owner, full-time social media professional and avid cook and gardener. I love creating recipes and involving my kids in the process. The food we cook is usually (but not always) gluten-free. The “hippie” part of this blog comes into play in the ingredients we use—I’m pretty vigilant about the health of my family and you could even call me “crunchy.” The “modern” part is that I am busy! You won’t catch me making my own nut milk or churning butter (not that there’s anything wrong with that). I’m more than happy to take the shortcuts provided by our lovely grocery stores and online shopping —especially in the midst of this global pandemic.
My little Spider-Man freak turned 4 this week! We have a tradition of making an epic cake (I love an epic cake!). This one was two boxes of #glutenfree @kingarthurbaking chocolate mix, with two boxes of @ghirardelli pudding mix and I swapped the oil for butter and the water for whole milk. It was three thick ten-inch layers that I did in springform pans. I topped it with homemade #buttercreamfrosting and some melted chocolate frosting. (There is a link to this cake mix in my bio!). It’s been a wild week here in Texas—some were without power, some lost water to their homes, some are still boiling water before they drink it. We had enough food in the house to make it, but the usual things I would have purchased in the middle of the week were unavailable, so I found myself digging deep into the cabinets for recipe ideas. Meanwhile, set the fruit (defrosted) in a bowl with the sugar and let them sit for a few minutes. Once the 30 minutes is up, turn your burner to medium heat and start whisking the tapioca mixture.
I’ll go first: tapioca with fruit purée (see last post). Groceries were hard to come by this week! My household was very fortunate to have made it through this week with power and water (and heat!) but many suffered. We are so thankful that most Texans have electricity and water restored but many are still managing hardships from this weeks unprecedented weather. It’s rare that I come up with a recipe in the pastry or bread category that comes out perfect the first time. Now, this is a pretty basic #glutenfree scone recipe, but I altered the ratios of butter, cream and yogurt and played with the spices and extracts for a flavor I knew I’d love. These scones came out perfect… biscuit-y without being too crumbly, the perfect dryness of a scone with enough moisture to hold it together. The cinnamon sugar mixture leaked out and formed crunchy, crispy, chewy little sugar morsels and the tops of the scones had just the right amount of crunch. These were incredibly easy to make and when paired with a slice of bacon and a cup of coffee — total heaven.
