some highlights from Bermuda /// and some things I learned: this was just a little family trip and our first time on a cruise, but the time with my family in a new place with new experiences (without my phone) really helped me learn a few things: • celebrate the little things because life is short • time away from your phone is much needed • don’t sweat the small stuff • you can change an experience by making the best of it rather than always looking at the glass as half empty • it’s good to push yourself out of your comfort zone because that is where growth happens • I am stronger than I give myself credit for • I can survive without taking pics of all my food 😂

i graduated i’m not usually the type of person that is good with big changes, but i think i’m ready to be pushed out of my comfort zone and into this new chapter of my life. everyone always told me college was going to be the “BEST TIME OF YOUR LIFE”, however, i thought if i was not loving every second of it, i was doing something wrong. the pressure of knowing life would be all down hill from here also wasn’t too reassuring. it took a couple years, but i eventually understood that it was MORE THAN OKAY for me to not love college, and I wasn’t alone in feeling that. once i made that realization, i soon accepted that I AM IN CONTROL of my own destiny, and when people say that life is down hill from college, you have a choice of whether you want to is accept that or reject it. i am unbelievably grateful for these past four years, the education i got, the people i met, but most importantly how much i’ve GROWN. without this growth, i would not have been strong enough to REJECT this “downhill” fate or understand that what i love may not be what everyone else loves or says i should love. there is so much uncertainty that lies ahead now. i was in a comfortable space and now life as i know it will be forever different. i’ll be pushed outside of my comfort zone, but through the nerves, i’m excited to keep striving upwards and see what the next chapter of my life brings 😊

CHOCOLATE DIPPED CLEMENTINES 🍊 on a big chocolate kick lately (if you couldn’t tell by my posts) 🍫 & i love chocolate with fruit so i figured i’d dip some clemmy’s! how to: • peel and separate your clementines • melt your favorite chocolate in the microwave at 30 sec intervals (i used @altereco_foods 90% dark) • dip the clementine slices halfway into the chocolate, lay on a parchment lined plate / tray • sprinkle with coconut flakes, flaky sea salt, crushed nuts, or anything you’re feelin! • place plate / tray in the freezer for at least 20 minutes until the chocolate sets & enjoy (store in fridge)

CHICKPEA + AVOCADO SANDWICH 🥪🥑 (the best, easiest, healthy & vegan lunch!) you all know i love my chickpeas, but i guarantee anyone and everyone will LOVE them like this! Chickpea & Avo Mash: → 1/2 can of chickpeas, rinsed → 1/2 avocado → juice from half a lemon → salt and pepper to liking → to make: mash all the ingredients together (i like to leave some whole chickpeas, but you can mash it as much as you like!) sandwich #dEats → @canyonglutenfree bread 🍞 , romaine lettuce 🥬 for a fresh crunch, and the chickpea mash 🥑

in honor of #nedaweek ….. even though bagels, toast, and sandwiches are all things that are very common to my page and diet today, that was certainly not the case 1 year ago when you would never catch me eating any of these “fear foods”. Like so many people in todays society, I took “healthy eating” too far to a point where it wasn’t healthy anymore. its been a long journey of healing, through which this community and all of you have helped so much along the way. i am exited and to continue on this journey that requires a lot of hard work, listening to my body, and most importantly getting to enjoy life and enjoy food. Food is fuel. Everyone’s body deserves to eat, to feel nourished, satisfied, and happy. this community has shown me so much & helped me recover, grow & now help spread awareness for ed’s and recovery which I am so grateful to do. I am so thankful to all of you who have followed me on my journey & have been going through similar journeys. everyday we get stronger together ❤️ Last thing I want to say is that yesterday, one of my Tiktoks helped someone overcome one of their fear foods, and as silly as it may sound, in that moment I knew that I am exactly where I need to be. I no longer need to be ashamed or scared of sharing my past because I have gone through everything for a reason, and now i am able to spread awareness and help others and for that i am truly so excited for!

✤ HEALTHY THIN MINTS ✤ Another healthier copycat Girl Scout cookie because i’m OBSESSED 🤩 Nothing against girl scouts, but these are 10000 times better even tho they may be a little uglier 🤷🏼‍♀️ ingredients: • 1 cup almond flour • 2 tbsp cacao powder • 1 tbsp maple syrup • pinch of salt • 1/2 tsp peppermint extract • 2.5 tbsp melted coconut oil • 1 bar melted peppermint dark chocolate @altereco_foods (or use 1 bar of dark chocolate with 1/4-1/2 tsp peppermint extract) to make: • preheat oven to 350 and lime a baking sheet with parchment (i use a reusable silicon baking mat which wud be a great gift for the baker in your life!) • combine all the ingredients in one bowl • scoop into tbsp size balls, and then flatten down into a classic thin mint shape • bake for 15 minutes • let cool & melt your chocolate • dip cookies into chocolate, refrigerate for at least 15 minutes to let it set & then ENJOY 😀

just a classic pb&(homemade)j toast for a simple Saturday morning breakfast made a batch of my Cranberry Chia Jam to use up some of the cranberries in my freezer & spread it on some @canyonglutenfree toast along with @crazyrichardspb crunchy peanut butter

Healthy Samoa Cookie Copycats 🥥🍪 because Its GIRL SCOUT COOKIE SEASON!!!!!! This recipe went viral on TikTok last year & for good reason! They are super simple to make, and they are vegan, gluten free & refined sugar free! Ingredients: ❁ 1 cup unsweetened coconut ❁ 1 ripe banana ❁ 1 tsp vanilla ❁ Melted chocolate Instructions: 1. Preheat oven to 350 2. Mash banana and mix in coconut and vanilla 3. Roll into 2 tbsp balls, flatten, and with your pointer finger, poke a hole in the center and wiggle until the cookie resembles the classic Samoa shape 4. Bake for 20 minutes or until golden brown 5. Remove from one, let cool, and drizzle with melted dark chocolate

starting Super Bowl Sunday off with my kind of nachos: APPLE NACHOS 🍎🏈 #dEats ⇢ 🍎 1 large apple, sliced thinly 🍎 drizzle of creamy peanut butter 🍎 chia seeds 🍎 coconut flakes 🍎 cacao nibs 🍎 granola

i know it’s quite a controversial topic, but i actually do like rice cakes 😛 simple snack #dEats 👉🏼 2 lightly salted rice cakes with mashed avocado 🥑, squeeze of lemon 🍋, salt & pepper🧂, cherry tomatoes 🍅 & hemp hearts 🌱

HEALTHIER PUPPY CHOW (aka muddy buddies) with a VALENTINE’S DAY TWIST🍫🍓💖 ingredients: • 7 cups rice chex cereal 🥣 • 1 cup choc gems / chips @hukitchen 🍫 • 1 cup creamy peanut butter @spreadthelove 🥜 • 1/2 tsp vanilla • pinch of salt • 1/2 cup freeze dried strawberries @kaysnaturals 🍓 • 1/2 cup powdered sugar to make: • in a large microwave safe bowl, add the chocolate and peanut butter. microwave until melted, stirring every 30 seconds • once melted, stir in the salt and vanilla • then add the cereal and stir carefully with a rubber spatula until evenly coated • place in the fridge for five minutes to allow it to cool slightly • meanwhile, add the freeze dried strawberries to a blender or food processor and lightly pulverize until it turns into a dust (you can leave some whole pieces too) • place 1/4 cup of powdered sugar and a 1/4 cup of the strawberry powder into a gallon zip loc bag • add half of the muddy buddy mixture into the bag, then another layer of powdered sugar and strawberry powder, and then the last of the puppy chow on top of that • deal the bag, and shake until all the cereal pieces are evenly coated • pour mix onto a parchment lined baking tray and place in the fridge to finish cooling completely • ENJOY 🥰 (store in a air tight container in the fridge)
