It’s made with perfectly ripe Avocados From Peru, sweet and tangy citrus, peppery arugula, flavorful fennel and the perfect Lemon Dressing! This easy recipe is simple to make in just 20 minutes, and makes the perfect healthy meal prep, spring dinner, or easy lunch. We’re keeping it totally dairy-free by adding creaminess from the avocados, and it’s also gluten free and plant-based. Avocado Citrus Salad SERVES 4 1 ripe but firm @avosfromperu avocado, sliced 3 cups baby arugula, coarsely chopped 1 fennel bulb, thinly sliced 1 large mandarin orange, cut into 1” pieces 1 red grapefruit, cut into 1” pieces 2 tbsp toasted pine nuts 8-10 mint leaves, chopped Lemon Maple Vinaigrette 1 large lemon, juiced 2 tbsp tahini or olive oil 1 tbsp maple syrup 1/2 tsp dijon mustard 1/2 tsp garlic powder salt and pepper, to taste Add all ingredients for the salad to a large plate or bowl.
