Happy happy Wednesday my friends!💃🏼 I still cannot believe tomorrow is already thanksgiving😳 where did the time go??! I’m excited for the holiday season but don’t want it to go by so fast!!🎄 I’m sharing one of my fav mug cake recipes (paleo & vegan!) to make while you prep for tomorrow!😋 I added in some berries and extra chocolate chips-highly recommend🙌🏻 Anywho, I’ll leave the recipe below and I hope you all have a wonderful day!💕 * PALEO & VEGAN COOKIE MUG CAKE🍪 Ingredients: -1 Tbsp almond flour -1 Tbsp coconut flour -2 Tbsp maple syrup (or honey) -1 flax egg (or regular egg for non vegan version!) -2 Tbsp vegan choco chips -splash of vanilla Mix up the wet ingredients then stir in the dry ingredients until a dough forms (can add almond milk if it’s too thick) then fold in the chocolate chips. Top with some more choco chips before popping it in the microwave for ~1 min; cook longer/shorter depending on how gooey you like it. Happy happy Monday my friends!💃🏼 it’s Thanksgiving week which means a short week (for most of us)!🦃 I’m sure our feeds are all full of allll the thanksgiving recipes, which I’m so here for, but I thought I’d share the perfect snack to have on hand WHILE your prepping all that delicious thanksgiving food this week!😋 some gf/df PUMPKIN BANANA BREAD🎃🍌 bc the pumpkin recipes do not end in my house!🤷🏼‍♀️ Anywho, I’ll leave the recipe below and I hope you all have a wonderful start to the week!💕 * GF/DF Pumpkin Banana Bread (vegan option!) Ingredients: -2 large bananas, mashed -1/3 cup pumpkin purée -1/3 cup coconut oil, melted -1 tsp pumpkin pie spice -1 tsp cinnamon -1 tsp baking soda -1 1/2 cup gluten free 1:1 baking flour -1 egg (or sub flax egg!) -1 cup coconut sugar -1/3 cup vegan chocolate chips Directions: Preheat oven to 350°F and line a loaf pan with parchment paper. In a large bowl, mix the wet ingredients and then mix in the dry until well combined. Fold in the chocolate chips. Pour into loaf pan, top with more chocolate, and bake for 50-55 min or until a toothpick comes out clean. Happy happy Friday my friends!💃🏼 Taking a break from the holiday flavors to share my fav recipe lately: PALEO/VEGAN GRAHAM CRACKERS🤩 that make the most delicious s’mores!🙌🏻 I stand by the fact that Fridays call for treats, thus I will be making some cozy s’mores later tonight🤪 Save this recipe as these graham crackers are perfect for a pumpkin fluff dip or I’m thinking they could make a delish pie crust🤤 On another note, I spent many hours in the kitchen yesterday and have got some good recipes coming😆Anywho, I’m enjoying my pumpkin coffee, watching Kelly & Ryan (I love watching them in the morning lol), and I hope you all have a fab Friday!💕 * Vegan/Paleo Graham Crackers Ingredients: -2 Tbsp granulated monk fruit/stevia sweetener -1 cup almond flour -1/2 tsp paleo baking powder -pinch of salt -1 tsp ground flax -splash of vanilla extract -1 tsp molasses -3 Tbsp melted ghee or coconut oil for vegan Directions: preheat oven to 300°F and line a baking sheet with parchment paper. Mix all of the dry ingredients and then add in the wet ingredients until a dough forms. Begin rolling the dough between 2 pieces of parchment paper (makes it easier and doesn’t stick to rolling pin!). Once it’s about 1/8 inch thick, move the dough to the baking sheet. Remove the top parchment paper and cut into squares. Bake for about 16-19 min until golden. Remove and cut the dough again to make sure each piece is separate. Directions: Add all ingredients (except for the chocolate chips and @giganticcandy candy bar) to a blender and blend until smooth. Pour 3/4 of the batter into a greased ramekin, add the chocolate chips, and pour the rest of the batter on top. Top with your @giganticcandy candy bar and bake at 400°F for about 18-20 min. Happy happy Friday my friends!💃🏼 Fridays call for treats (my motto-always🤪) so I’m sharing these VEGAN NO BAKE CHEESECAKE BITES🍫😋 * It may seem odd to add vegan sour cream to these but just trust me on this🙌🏻 These are best served out of the freezer (let them sit for like 5-10 min!) or you can eat them in more of a ~mousse~ texture if you keep them in the fridge!🤤 I’m a cheesecake gal through and through (had my mom order me not one but TWO Cheesecake Factory cheesecakes for my 17th birthday lol) and it’s probably one of the desserts I miss the most since developing all of my dietary restrictions😩 butttt these definitely come close to the real deal, if I do say so myself!🤣 Anywho, I’ll leave the recipe below and I hope you all have a fab Friday!💕 * Vegan No Bake Cheesecake Bites🍰 Ingredients: -2/3 cup coconut cream (the solid part at the top of a can of coconut milk!) -1/2 cup almond butter (or nut butter of choice!) -1/2 cup coconut sugar -1/3 cup dairy free yogurt, I used @foragerproject cashew milk yogurt -1/4 cup dairy free sour cream, I used @foragerproject df sour cream -1 tsp vanilla extract -1 cup vegan chocolate chips, I used @paschachocolate -1 tsp coconut oil Directions: In a large bowl, mix together the coconut cream, sugar, almond butter, yogurt, vanilla and sour cream until well combined. I used a hand mixer to get it nice and fluffy! Pour the cheesecake mixture into any silicone mold you’d like. Mine made 12 cheesecake bites. Place in the freezer to harden. Once hardened, remove from the mold and place on a baking sheet lined with parchment or wax paper. Melt the chocolate and coconut oil until you have a runny consistency. Pour over the cheesecakes and return to freezer for at least 20 min. When ready to eat, let them sit in the fridge for 5-10 min. so that they are a cheesecake consistency. Enjoy!😋

Happy happy Thursday my friends!💃🏼 Arguably one of my fav days of the week🤩 and I made some paleo banana bread to go along with a good day😋🍌 As you can tell from my stories, I’m already jumping into the holiday baking and it’s getting me so excited for all things Christmas🎄🥰 especially the cookies!🍪 Anywho, banana bread is a year round snack in my life so I’ll leave the recipe below and I hope you all have a wonderful Thursday!💕 * Paleo Banana Bread🍌 Ingredients: -2 cups almond flour -1 tsp baking soda -pinch of salt -1 tsp vanilla extract -2 Tbsp maple syrup -3 eggs (can sub flax eggs but I haven’t tried!) -3 very ripe bananas -1 Tbsp cinnamon -optional 1/2 cup vegan chocolate chips Directions: Preheat oven to 350°F and line a loaf pan with parchment paper. In a large bowl mix the wet ingredients. Add in the dry until well combined. Fold in the chocolate chips, pour into loaf pan, and bake for 40-45 min. Happy happy Wednesday my friends!💃🏼 Thinking about making another batch of these paleo pistachio cookies today😋🍪 I think pistachio is such an underrated flavor, it might be my fav honestly😍 I loveeeee the flavor of almond extract, anyone with me?!😋 These also taste so dang good with some ice cream…just sayin🤷🏼‍♀️ Anywho, I’ll leave the recipe below and I hope you all have a wonderful Wednesday!💕 * Paleo Pistachio Cookies Ingredients: -1 egg (or can sub flax egg but I’ve only made these using a real egg!) -1/2 tsp-1 tsp almond extract depending on how strong you like the almond flavor -1/3 cup ghee -1/2 cup granulated sugar of choice -1/4 cup tapioca flour -2 cups almond flour -1/4 cup pistachios, chopped -pinch of salt -1/2 tsp baking soda Directions: Preheat oven to 375°F and line a baking sheet with parchment paper. In a large bowl and using a hand mixer, beat together the ghee and sugar until smooth. Next, add in the egg and almond extract and continue beating until smooth. Add in the dry ingredients until a dough forms. Fold in the pistachios, leaving some for topping. Roll the dough into cookies and place on the baking sheet at least 2 inches apart (these do spread a decent amount!). Top with more pistachios and bake for about 11-12 min. Remove and let cool. I used @sunbutter ) -splash of vanilla extract -2 tsp pumpkin pie spice -1/2 tsp cinnamon -1/2 tsp salt Directions: Preheat oven to 350°F and line an 8x8 baking dish with parchment paper. In a large bowl, mix the wet ingredients until well combined. Add in the dry ingredients and mix well. Begin pressing the mixture into the prepared baking dish and top with more chocolate chips. Who doesn’t love French toast…especially when it’s made with an English muffin and topped with honey & berries?!😋🫐 * I’ve been making these English muffin French toasts a lot recently for my fam and they’re obsessed🙌🏻 The @foodforlifebaking Ezekiel 4:9 Low Sodium English Muffins are made from certified organic and non-GMO sprouted whole grains and seeds, which means they’re flourless and provide a source of complete protein!💃🏼 They also have no added sodium. Highly recommend using these to make French toast. You won’t ever want regular French toast again, lol!🤣 * English Muffin French Toast Recipe -2 @foodforlifebaking Ezekiel 4:9 Sprouted Grain Low Sodium English Muffins -1/4 banana, mashed -1/2 cup vegan milk of choice (I used oat milk!) -splash of vanilla extract -1-2 tsp cinnamon -1 Tbsp maple syrup -1 1/2 Tbsp gluten-free flour -vegan butter (for cooking) Directions: In a bowl, combine the banana, milk, vanilla, cinnamon, maple syrup, & flour. Mix until well combined. Heat a pan over high heat and add vegan butter to the pan generously. Split the English muffins apart and dip the first half in the banana mixture, coating it completely. Place in the heated pan and cook for 2-3 min (or until golden) then flip and cook for another 2 min. Remove from pan and repeat with the next 3 halves of English muffins. Happy happy Friday my friends!💃🏼 I think we all deserve a MINI CHOCOLATE BUNDT CAKE🍫 to celebrate the end of the week!🙌🏻 They’re vegan, paleo, & gf so everyone can enjoy one😋 Y’all know I stand by the fact that Friday’s deserve treats so I simply had to share this🤪 Alsoooo it’s my grandma’s birthday today and that makes it all the more fitting to post a cake recipe!🎂 I love small batch recipes like this bc then I can make cake so much more often without worrying about wasting a whole cake lol🤣 Anywho, I’ll leave the recipe below and I hope you all have a wonderful Friday!💕 * Vegan/paleo/GF Chocolate Mini Bundt Cakes (Makes 2 mini cakes) Ingredients: -1/4 cup nut butter of choice (I used @sunbutter ) -2 Tbsp unsweetened applesauce -2 1/2 Tbsp maple syrup -1 flax egg (1 Tbsp flax with 3 Tbsp water) -1 1/2 Tbsp cacao powder -1 1/2 Tbsp coconut flour -1 oz. vegan chocolate chips, I used @paschachocolate -pinch of salt -1/2 tsp baking soda For the optional glaze (glaze is not considered paleo, so omit if paleo!) -1/2 cup powdered sugar -1/2 Tbsp water or df milk Directions: Preheat oven to 350°F and grease 2 mini Bundt cake pans. In a bowl, mix the applesauce, nut butter, maple syrup, flax egg, & melted chocolate chips until well combined. Add in the dry ingredients and mix. Pour the batter evenly into prepared Bundt pans and bake for 28 min. Remove and let cool while you mix the optional glaze. In a large bowl combine the wet ingredients and then mix in the dry. Fold in the diced apples. Pour batter into prepared loaf pan, top with a sprinkle of sugar, & bake for about 50 min or until a toothpick comes out clean. Happy happy Wednesday my friends!💃🏼 The pumpkin recipes do not end over here…so I made some PUMPKIN COOKIE DOUGH BARS🎃 to carry us through the rest of the week!😋 One of my favorite freezer treats this fall🙌🏻 I’m thinking I need to make a gingerbread version of this asap🍫 On another note, the leaves by my house are really changing colors the past few days and oh my, it is beautifullll outside🍂 absolutely freezing BUT so pretty😍 Anywho, I’ll leave the recipe below and I hope you all have a wonderful Wednesday!💕 * Paleo/Vegan Pumpkin Cookie Dough Bars🎃 Ingredients: For the Pumpkin Cookie Dough: -1/2 cup pumpkin purée -1 1/2 cup almond flour -1/4 cup almond butter, I used @abbysbetter -1 Tbsp coconut oil, solid -1 tsp pumpkin pie spice -1/4 cup coconut sugar For the Chocolate Layer: -1 1/2 cup vegan chocolate chips, I used @hukitchen Directions: Line a loaf pan with parchment paper and set aside. In a food processor, combine all of the pumpkin cookie dough ingredients until you have a thick dough. Press the dough into an even layer in the loaf pan. Set in fridge while melting the chocolate chips. Pour the melted chocolate over the cookie dough layer and freeze for at least 1 hour.
