VEGAN/GF CHOCOLATE PB POPTART🍫 to start this Thursday off in the best way😋 y’all know by now that I loveee making these single serve vegan/gf poptarts💃🏼 They’re the perfect lil treat when I’m craving something sweet!🙌🏻 and anything chocolate pb is simply unmatched🍫🥜 brown sugar cinnamon poptarts were my fav og poptart growing up but I’m curious what flavor you all liked??! Anywho, I’ll leave the recipe below and I hope you all have a wonderful Thursday!💕 * Single serve Chocolate Pb Poptart (Vegan/GF/DF)🍫🥜 Ingredients: For the Pastry: -6 Tbsp almond flour -1 Tbsp coconut flour -4 tsp coconut oil, melted -4 tsp water -splash of vanilla For the Filling: -2ish tsp peanut butter -1 tsp cacao powder -1 1/2 tsp maple syrup For the Chocolate Topping: -2 tbsp vegan chocolate chips -optional sprinkles Directions: preheat oven to 350°F and line a baking sheet with parchment paper. In a bowl, combine the pastry ingredients until a dough mixture is formed. Roll the dough into a ball and split in half. Flatten them out into equal rectangles on the prepared baking sheet. Mix together the filling ingredients and spread it onto one of the rectangles. Place the other rectangle on top and pinch the edges together using a fork. Bake for 18 min. Begin melting the chocolate topping until smooth. Once the poptart is done, remove from oven and spread the chocolate topping on top along with the sprinkles. Enjoy!😋

PROTEIN BAKED OATS🫐 on this Tuesday morning!💃🏼 I make a batch of these for easy breakfasts (or sometimes a dessert/snack!)😋 They’re simply delish!🙌🏻 I forgot to bake in some berries this time but I love to throw some berries into the batter too🍓 and top it with some nondairy whipped cream of course🤣 Anywho, I’ll leave the recipe below & I hope you all have a wonderful Tuesday!💕 * Protein Baked Oats Ingredients: -2 cups oats -1 tsp baking powder -3-4 scoops protein powder of choice (I used @nuzest_usa ) -pinch of salt -2 mashed bananas -1 egg or flax egg -splash of vanilla extract -1 cup df milk of choice -1/4 cup maple syrup or honey (can omit or use less if you want it less sweet!) -handful of choc chips (optional) Preheat oven to 350°F and grease an 8x8 baking dish. Mix all of the wet ingredients and then add in the dry until well combined. Pour mixture into pan and bake for ~35 or until lightly browned on top. Enjoy!😋

VEGAN/DF CHOCOLATE FUDGE TRUFFLES🍫 to kickoff the weekend in the best way😋 I’m going to say these are acceptable to have for breakfast with my coffee bc life is short and chocolate is delicious.🙌🏻 anyone who knows me knows I will take chocolate dessert over any other food any day🤣 I’d rather eat the dessert and skip the meal tbh🤷🏼‍♀️ and these are soooo fudgy and delish💃🏼 Anywho, I’ll leave the recipe below and I hope you all have a wonderful Saturday!💕 * Chocolate Fudge Truffles🍫 (Vegan/DF/GF) Makes about 10 truffles Ingredients: -about 3/4 cup vegan chocolate (I used @evolvedchocolate !) -1/2 cup canned coconut milk, only the creamy part! -splash of vanilla extract -1 Tbsp maple syrup -pinch of salt -about 1/3-1/2 cup cacao powder for coating! Directions: Heat the coconut milk in a saucepan over medium heat until it starts to bubble slightly. Remove from heat and pour over the chopped chocolate. Allow it to sit and melt the chocolate a bit before stirring it to help melt it all together. Once completely incorporated, add in the vanilla, maple, and salt. Mix thoroughly, cover, and set in fridge for 1-2 hours or until it can be scooped into balls. Don’t chill it too long or it will get too hard to scoop! Roll into balls and toss in the cacao powder to coat them. Enjoy!😋

Happy happy first day of March my friends!💃🏼 Starting off the month with some springy berry overnight oats!🫐 I used some fun marionberry jam I had for these but you can use any jam/jelly you’d like!🍓 or make your own!🙌🏻 I honestly feel like the past month kinda flew by and the fact that it’s March is weird yet exciting bc we’re getting closer & closer to summer weather☀️ Anywho, I’ll leave the recipe below and I hope you all have a wonderful Tuesday!💕 * Berry overnight oats🫐 -1/2 cup oats -1 Tbsp chia seeds -1 Tbsp hemp hearts -3/4 cup df milk -1-2 tsp maple syrup -splash of vanilla -1 Tbsp (+ extra for layering!) Marionberry jam from @spreadthelove (or any jam of choice!) Directions: Mix all of the ingredients and place in refrigerator for a few hours or overnight. When ready to eat, remove from the fridge and layer with some more jam. Top with your favs & enjoy!🤪

Happy happy Wednesday my friends!💃🏼 We’re about halfway through the week which calls for some PROTEIN DONUTS🍩 protein desserts like these are my fav to have in the evening🙌🏻 or in the morning paired with my coffee☕️ basically anytime of day🤣 Anywho, it was almost 60° here the past two days😍 and today it’s a whopping 28° and dropping🙃 so I’ll be enjoying some cozy donuts while dreaming of warm weather…& I’ll leave the recipe below! Have a wonderful Wednesday!💕 * Paleo/Vegan Protein Donuts🍩 -1/2 cup almond flour -1/2 cup vegan vanilla protein powder (I used @unicornsuperfoods vanilla cake protein powder!) -1 tsp baking powder -1/4 cup df milk -1/4 cup coconut sugar or sugar substitute -1 egg or flax egg for vegan -1 Tbsp coconut oil, melted -Frosting: 2 Tbsp coconut butter + 3 Tbsp maple syrup *note: can use any protein powder but I’ve only tested recipe with this protein so can’t guarantee the same results!* Directions: Mix all of the wet ingredients and then incorporate the dry until well combined. Pour into a greased donut pan and bake at 350°F for 15-17 min. Let cool before topping with optional icing. PB PROTEIN OAT BITES🥜 Happy happy Tuesday my friends!💃🏼 I know Valentine’s Day is over but I’m still using my lil heart mold to make my snacks bc it’s fun🤷🏼‍♀️ I made these pb protein oat bites to have on hand throughout the week!🙌🏻 Kind of a Reese’s vibe but with some protein and health added in there with the chia, flax, hemp, & protein powder!😍 Anywho, I’ll leave the recipe below & I hope you all have a wonderful Tuesday!💕 * Pb Protein Oat Bites Ingredients: -1 C oats -1/2 C runny pb -1/3 C honey -4 scoops chocolate protein (I use @nuzest_usa chocolate protein!) -1 Tbsp chia seeds -1 Tbsp ground flax -1 Tbsp hemp seeds -1 Tbsp unsweetened shredded coconut -1 Tbsp water Directions: mix all of the dry ingredients then add in the pb, honey, and water until well combined. Roll into balls (or fill a silicone mold like I did!) and place in freezer to harden for 15 min. Take them out and drizzle with optional melted chocolate. Enjoy! Paleo & vegan dark chocolate raspberry coconut cups to kickoff this Friday!💃🏼🍫 I posted the filling of these earlier this week (bc it’s so good & can be eaten on its own lol🤣) so I simply had to share these yummy chocolate cups!😋 My Valentine’s Day will be all about yummy chocolate and desserts this year🤷🏼‍♀️ who’s with me?! I’m also honestly curious if people actually celebrate Valentine’s Day as much as social media hypes it up…like do y’all actually make plans, buy gifts, etc.?! It’s just another day for me…but maybe I’m in the minority here idk🤣 Anywho, I’ll leave the recipe below and I hope you all have a wonderful Friday!💕 * Paleo & Vegan Dark Chocolate Raspberry Coconut Cups🍫💗 Ingredients: For the Chocolate: -1 bag of df dark chocolate chips (I used @enjoylifefoods ) -1 Tbsp coconut oil For the Filling: -1 cup frozen raspberries -1/2 cup shredded unsweetened coconut -2 Tbsp coconut cream -2 Tbsp maple syrup -1/4 cup coconut flour Directions: Line a muffin tin with cupcake liners (or use a chocolate cup mold if you have one!) and warm up the chocolate in a bowl with the coconut oil until completely melted. Begin adding half of the chocolate mixture to the cups and spreading it up the sides. Once they are all filled with a thin layer of chocolate (mine made about 7 regular sized cups!), place in the freezer to harden. While the bottom of the cups are chilling, warm up the raspberries to room temperature then add to a food processor. Add the rest of the ingredients and pulse until a dough mixture forms. Next, remove the chocolate cups from the freezer and begin rolling out flattened “patties” of the raspberry filling and placing one in each cup. Then, use the remaining melted chocolate to cover the raspberry filling/fill up the the cups and freeze for another 10-15 minutes. In a large bowl, mix the wet ingredients. Add in the dry until well combined. Fold in the chopped chocolate. Scoop the dough into about 9-10 cookies and bake for 8-9 min. Some raspberry coconut deliciousness to start off this Monday!💃🏼😋 I used the filling from my dark choc coconut raspberry cups (recipe a while back and I’ll probably post again this week bc they’re fun and Valentine’s Day themed!💗) and just ate it straight from the freezer with a spoon🤪 Kinda like ice cream but even better🤩 I’m someone who ALWAYS has treats stocked in my freezer, and this is one of my favorites! Anywho, it’s the perfect pink dessert to treat yourself to this week🥰 and I hope you all have a wonderful Monday!💕 * Raspberry Coconut Filling (Vegan/paleo/gf) Ingredients: -1 cup frozen raspberries -1/2 cup shredded unsweetened coconut -2 Tbsp coconut cream -2 Tbsp maple syrup -1/4 cup coconut flour Directions: Thaw the raspberries to room temperature and then add them to a food processor along with the rest of the ingredients. Pulse until a dough consistency form. Scoop out and place in a loaf pan or small container to freeze for at least 2 hours. Feeling festive this morning with my paleo/vegan chocolate heart poptarts!💃🏼💗 It’s safe to say I’m obsessed with poptarts lately lol but I’m not mad about it🤷🏼‍♀️ These are especially my fav bc they’re filled with chocolate🍫 I may not have a valentine this year but I’ve got these, so I’m happy🤪 Anywho, I’ll leave this fun Valentine’s Day dessert recipe below and I hope you all have a wonderful Friday!💕 * Paleo & Vegan Chocolate Filled Poptarts Ingredients: -1 1/4 cup cassava flour -1 stick vegan butter (softened) -2 Tbsp coconut sugar -1 tsp salt -1 flax egg -1/2 cup water -1 scoop collagen (I used @vitalproteins ) -1 df chocolate bar (for the filling), I used @hukitchen For the optional icing: -1/2 cup powdered sugar (use paleo if paleo) -1/2 tsp vanilla extract -1-3 Tbsp water depending on desired consistency! Directions: Preheat oven to 425°F and line a baking sheet with parchment paper. Make the filling by melting your chocolate bar of choice until smooth. In a food processor, add all of the ingredients for the dough and pulse until a dough forms (it will be crumbly). Place half of the the dough on a surface sprinkled with extra flour and begin rolling out into a large rectangle. If using a cookie cutter shape, begin cutting out about 6 pieces and set aside. If not using a cookie cutter, cut out 6 rectangles and set aside. These will be the bottoms of the poptarts. Roll out the other half of the dough and repeat the same steps. Add about 1/2 Tbsp of chocolate filling to each of the 6 cutouts and then place another piece of dough on top. Seal the poptarts shut by pinching the edges with a fork. Bake for about 23-25 min. Remove from oven and let the poptarts cool slightly before adding the optional icing. Mix the icing together and top the poptarts. February calls for allll the fun pink and red treats!💕 I made these strawberry vegan Rice Krispie treats🍓 over the summer and already have the ingredients prepped to make them for some fun Valentine’s Day treats!💗 I love any excuse to make festive desserts🤪 Anywho, I’ll leave the recipe below and I hope you all have a wonderful Wednesday!💃🏼 * Strawberry Rice Krispie Treats (Vegan & GF)🍓😋 Ingredients: -6 cups gf puffed rice cereal -6 cups @mydandies vegan mini marshmallows -1/4 cup vegan butter -1/4 ounce @amoretti wild strawberry artisanal flavoring (or you can sub some strawberry purée, but I haven’t tried so I can’t guarantee the results!) -splash of vanilla extract Directions: in a large pot over medium heat, begin melting the butter and marshmallows. Continue stirring until melted down and remove from heat. Stir in the strawberry flavoring and vanilla extract. Once combined, begin stirring in the puffed rice cereal. Grease an 8x8 baking pan and begin pressing the mixture into the pan. *tip: put your hand in a plastic bag and spray the bag with coconut oil, then you can easily press the sticky mixture into the pan without it getting stuck to your hands or a spatula! Happy happy Tuesday my friends!💃🏼 Back with my favorite flavor combo ever: chocolate pb🍫🥜 I made these homemade df/gf peanut butter cups a while back and they still might be one of my favorite desserts🙌🏻 Reese’s used to be my FAVORITE candy ever. Hands down. And I still find myself craving them lol so these do the trick!🤤 and they’re bigger than a classic Reese’s cup so I’d call that a win😜 Anywho, I’ll leave the recipe below and I hope you all have a wonderful Tuesday!💕 * Homemade DF Peanut Butter Cups Ingredients: For the chocolate: -2 vegan chocolate bars of choice (I used @evolvedchocolate ) -1/2 tsp coconut oil For the pb filling: -1/2 cup pb of choice -3 Tbsp coconut flour -2-3 Tbsp maple syrup (depending on how sweet you’d like them!) Directions: Using silicone cupcake liners or regular cupcake liners, melt the chocolate and fill the bottom of each cup with chocolate and spread up the sides a little. Place in the freezer while you mix up the pb filling. Spoon about 2 tsp of pb filling into each cup and pour in the rest of the chocolate, coating the pb completely.
