Before Implementing a Gluten-Free Diet Second, a lot of people do a genetic test for celiac disease if they’ve already implemented a gluten-free diet before they were tested for celiac disease. This is why many people who go gluten free before ruling out celiac disease take the controversial Gluten Challenge, which allows them to get tested for celiac disease after implementing a gluten-free diet. If your genetic test is negative for both DQ2 and DQ8 genes, like my son’s test, then you know you don’t have nor can ever have celiac disease. The test revealed that I carry the DQ2 gene, the most common celiac gene, yet it encouraged me to explore getting tested for a “gluten sensitivity” vs. getting tested for celiac disease.
When I think back to when I was diagnosed with celiac disease, I wish I had been kinder to myself. Here’s a sneak peak: You’ll need just a few ingredients to make my no-fail pancakes, including: Bob’s Red Mill 1:1 Gluten-Free Flour Blend: This flour is the perfect blend of flours and starches required to mimic the texture of gluten flour in baked goods. You can buy Bob’s Red Mill 1:1 Gluten-Free Flour on Amazon, on the Bob’s Red Mill website, or I have seen it at most grocery stores nationwide, including Sprouts, Safeway/Albertsons, and Kroger. The pancake is ready to flip when the batter starts bubbling, the pancake batter is set (not runny), and until each side is lightly golden brown. For an egg-free alternative, try using Bob’s Red Mill Egg Replacer, which is gluten free and safe for you to use if you have celiac disease or gluten sensitivity.

I know my kids are going to need a lot of healthy foods to help them get through the stressors of this unusual school year. That’s why I came up with three beautiful, tasty, kid-friendly, and of course, gluten-free snack boards that I can quickly make to help my kids stay healthy, focused and well nourished. and I’m ready to share a little inspiration to help get you started: Fuel your kids bodies with this snack board filled with healthy treats that give them the protein they need to nourish their growing bodies, and the healthy fats they need to support their developing brains. Tip #1: To keep juicy foods (like melons) or drippy foods (like nut butters) from spilling onto other foods, store them in their own bowls and place the bowls on top of each board.

It's the first day of school. Both of my kids will be working remote today.
