My name is Liz, I am Gluten Free Mom Colorado. I am married to the most amazing man, Tommy. I am the mother of three beautiful children Landon, Finn, and Daisy. For years I have been helping friends, family and others navigate the life of gluten-free living. I grew up in a gluten-free house, my mom and both brothers were diagnosed with Celiac Disease when I was young. My mom did an amazing job making everything from scratch in a gluten free kitchen. When I had my first child Landon my world was changed. He was born at 24 weeks because I have a short cervix. The doctor told us that he had a slim chance of survival and that his life would be plagued with severe complications. He survived and has minimal complications due to his prematurity, but when Landon was two he started getting rashes all over his body and he would constantly be sick. My mom advised me to get Landon tested for Celiac Disease. This was the beginning of my true GF journey. Shortly after he was diagnosed, I decided to go off gluten as well. Although I do not have Celiac Disease, I have found that I feel 100% better eliminating gluten from my diet. Recently Finn was having some issues with his legs and knees hurting. The doctor told me to take Finn off gluten to see if it was causing the inflammation and pain. Sure enough once we changed his diet the symptoms went away. We have Celiac Disease and gluten intolerance on both sides of the family. My sister-in-law and niece were recently diagnosed and my Grandma recently took gluten out of her diet due to an autoimmune disease. We are in a fortunate position that both of our families understand the purpose of living a gluten-free lifestyle. I am on a mission to help people find amazing gluten-free options and to see that this diagnosis is not a curse, but can actually be delicious.

In a medium bowl, combine gluten-free flour, salt, cinnamon, nutmeg, oil, and eggs. Slowly add in milk and whisk together. 2. Let the batter rest for 30 minutes or even overnight. 3. Heat a 10" non-stick pan or crepe pan over a med-high burner. 3. Once the pan is hot, take a ¼ measuring cup and scoop out batter. Pour the batter into the center of the pan and tilt the pan in slowly in a half circle to spread out the batter. Cook for 1-3 minutes until the top it set. 4. Carefully flip the crepe and cook for another 10-30 seconds to brown the other side. 5. Remove the crepe from the pan and repeat the process until all the batter has been used. 6. Strawberry Cheesecake No Churn Ice Cream 😋 🍨 Have you ever made no churn ice cream? It is so easy, creamy, and TASTY! It only takes about 10 minutes of prep time and a few ingredients to create the most delicious, gluten-free dessert. For this recipe, I wanted to go with a flavor we can not easily buy in the stores, strawberry cheesecake! Made with the base of heavy whipping cream, sweetened condensed milk, and vanilla, then I added cream cheese, strawberries, white chocolate chips, and gluten-free graham crackers. I can not even begin to describe how amazing and decadent this ice cream turned out, a true gluten-free delight! You have to give it a try for yourself! Ingredients 2 cups heavy whipping cream 14 oz can of sweetened condensed milk 1 teaspoon vanilla 4 oz softened cream cheese 1 pound fresh strawberries 1/2 cup crushed gluten-free graham crackers 1/2 cup white chocolate chips Instructions 1. Start by placing a 9x5 loaf pan in the freezer. 2. In a large bowl, use a hand mixer or a stand mixer to whip the cream until stiff peaks occur. 3. Once whipped cream is stiff, add sweetened condensed milk and vanilla to the cream and lightly fold in until combined, then add softened cream cheese and fold together. 4. Slice and quarter strawberries and crush into a jam consistency. Once strawberries are ready, add 3/4 of them to prepared ice cream mixture and lightly mix in. 5. Place half of the ice cream mix in prepared pan and top with half of the white chocolate chips and graham crackers. 6. Cover with the remaining ice cream mix, top with the remaining strawberries, and swirl in using a knife. Add remaining white chocolate chips and graham crackers to the top of the ice cream. 7. Cover with plastic wrap and place I the freezer on a level surface for 6-8 hours. Add baking powder, salt, and gluten-free flour 1/2 cup at a time until combined, then add chocolate chips mixing lightly until evenly spread through dough. 4. Form dough into walnut size balls and place on cookie sheet, then flatten each ball with a fork in a crisscross pattern. 5.
