My name is Liz, I am Gluten Free Mom Colorado. I am married to the most amazing man, Tommy. I am the mother of three beautiful children Landon, Finn, and Daisy. For years I have been helping friends, family and others navigate the life of gluten-free living. I grew up in a gluten-free house, my mom and both brothers were diagnosed with Celiac Disease when I was young. My mom did an amazing job making everything from scratch in a gluten free kitchen. When I had my first child Landon my world was changed. He was born at 24 weeks because I have a short cervix. The doctor told us that he had a slim chance of survival and that his life would be plagued with severe complications. He survived and has minimal complications due to his prematurity, but when Landon was two he started getting rashes all over his body and he would constantly be sick. My mom advised me to get Landon tested for Celiac Disease. This was the beginning of my true GF journey. Shortly after he was diagnosed, I decided to go off gluten as well. Although I do not have Celiac Disease, I have found that I feel 100% better eliminating gluten from my diet. Recently Finn was having some issues with his legs and knees hurting. The doctor told me to take Finn off gluten to see if it was causing the inflammation and pain. Sure enough once we changed his diet the symptoms went away. We have Celiac Disease and gluten intolerance on both sides of the family. My sister-in-law and niece were recently diagnosed and my Grandma recently took gluten out of her diet due to an autoimmune disease. We are in a fortunate position that both of our families understand the purpose of living a gluten-free lifestyle. I am on a mission to help people find amazing gluten-free options and to see that this diagnosis is not a curse, but can actually be delicious.

Get ready to gobble until you wobble! 🦃 Okay! I am all about these cute, gluten-free, holiday themed cookies! These are so easy and so delicious! The perfect treat for the kids during Thanksgiving! Instructions⬇️ 1. Start with 1 package of @sweetlorens sugar cookies and cook as directed 2. Remove from oven and immediately place your desired chocolate piece in the center (we used mini @reeses cups). 3. Let cool for 5 minutes and then add red, orange and yellow @mmschocolate 4. Add mini chocolate chips for they eyes and with orange frosting make the beak and legs 5. Let cookies completely cool and chocolate hardened 6. ENJOY!!! Spiced Bourbon Cranberry Sauce 🍊 This simple gluten-free spiced cranberry sauce will be the perfect addiction to your holiday table. Made with fresh cranberries, cinnamon, oranges and a fun twist of bourbon. The beautiful colors and flavor are sure to be a hit at your holiday meal. Ingredients •16 ounces bag of fresh cranberries •3/4 cups water •3/4 cups brown sugar •4 tablespoons bourbon •4 oranges •3 cinnamon sticks •pinch of salt Instructions 1. In a medium pot, combine water, sugar, bourbon, orange slices, cinnamon and salt. Stirring constantly bringing to a boil. 2. Reduce heat and add cranberries. Simmer for 20-30 minutes, until most of the cranberries have popped and sauce starts to thicken. Stir occasionally. 3. Remove from heat and let cool. This will be the first year without my Grandpa on this earth, which definitely makes this recipe even more special. I have the best memories of spending the night before Thanksgiving at his house and him and I prepping the turkey, making the stuffing and stuffing the bird. Gluten Free Churro Waffles 🧇 Churros in the shape of a waffle! Absolutely perfect for breakfast or a fun, mouth watering, dessert. An easy dough creates an amazing churro like texture, cooked to perfection in the shape of a waffle. Covered in cinnamon and sugar, then drizzled or dipped in a homemade chocolate sauce. Ingredients Waffle -1/2 cup butter -1 cup water -3 tablespoons sugar -1 cup gluten-free flour -4 eggs Cinnamon Sugar -1/4 cup sugar -1 tablespoon cinnamon -2 tablespoons butter Chocolate Sauce -1/2 cup heavy cream -1/2 cup dark chocolate chips Instructions 1. In a medium sauce pan, melt butter over medium heat. Once melted, add water and sugar and stir continuously until the mixture starts to simmer. 2. Remove from heat and add gluten-free flour to sauce pan. Stir mixture together, forming dough into a ball. Once formed into a ball, continue to stir for 2 minutes. Then, transfer to a bowl and let cool for 5 minutes. 3. While dough is cooling, beat the eggs. 4. Add 1/3 of eggs to the dough and mix together with a hand mixer. Continue this step until eggs are all added to dough. 5. Preheat waffle iron. 6. While waffle iron is preheating, combine cinnamon and sugar on a plate and melt butter. 7. Lightly grease waffle iron and place 1/4 cup of dough directly in the center of waffle iron. Waffles are done when golden brown. 8. Immediately transfer waffle to a plate, brush both sides with butter and roll in cinnamon and sugar. 9. Once all churro waffles are ready, it's time to make the chocolate sauce. In a microwave safe bowl, heat 1/4 cup heavy cream in the microwave until hot, then add chocolate chips to hot cream and let sit for 1 minute. Whisk together until combine. 10. Drizzle or dip churro waffles with chocolate. ENJOY!!!

Takeout fakeout 🍽️ with Gluten Free Chicken Teriyaki! Did you know that soy sauce contains wheat? This is something most people don't think about after starting a gluten-free diet. This was a sad loss for us when Landon was diagnosed with celiac disease. We loved teriyaki sauce and loved going to our favorite japanese restaurant to get the teriyaki chicken. Thankfully, I was able to make up a gluten-free version, using a gluten-free tamari sauce that tastes just as good (or better) than the gluten filled sauce we know and love. This teriyaki sauce is so flavorful; filled with ginger and garlic and the fun add-in of pineapple. So easy and so delicious. Hope you enjoy!!! Grain Free Pumpkin Donuts with Maple Glaze 🍁🎃 Filled with pumpkin spice and topped with the flavors of Maple syrup, these donuts are pure heaven. Ingredients Donuts ▪︎2 cups almond flour ▪︎1 teaspoon baking soda ▪︎1 teaspoon cinnamon ▪︎1 tablespoon pumpkin pie spice ▪︎1/2 teaspoon salt ▪︎2 tablespoons melted butter ▪︎1/4 cup milk ▪︎1/4 cup pumpkin puree ▪︎1/4 cup coconut sugar ▪︎2 eggs ▪︎1 teaspoon vanilla Glaze ▪︎1 cup powdered sugar ▪︎2 teaspoons milk ▪︎2 teaspoons maple syrup ▪︎1 teaspoon brown sugar ▪︎1 teaspoon cinnamon Instructions 1. Preheat oven to 350 degrees Fahrenheit and grease a mini donut pan. 2. Combine almond flour, baking soda, cinnamon, pumpkin pie spice and salt in a large mixing bowl. 3. In a separate bowl combine melted butter, milk, pumpkin, sugar, eggs and mix until smooth. 4. Add wet ingredients to dry and mix until combine. 5. Place the batter in a large baggy and cut about 1/2 inch off corner and squeeze batter into each donut cavity filling about 3/4 the way full. 6. Bake for 7-9 minutes and let cool for 2 minutes before removing from pan, then place on a wire rack to cool. 7. To make glaze combine powdered sugar, milk, maple syrup, brown sugar and cinnamon and mix until smooth and sticky. 8. Dip cooled donuts in glaze and sprinkle with cinnamon. ENJOY!!!!

Almond Flour Chocolate Chip Cookies 🍪 😋 These chewy, gooey, soft gluten-free cookies will be a new favorite in your home. The mouth-watering combination of sweet and salty that you won’t be able to resist. No one will ever believe these are both gluten-free and grain free! So easy to make and SO GOOD! Hope you enjoy! Instructions 2 1/2 cups almond flour 1 teaspoon baking soda 1/2 teaspoon salt 1 teaspoon ground cinnamon 1/2 cup coconut oil 3/4 cups brown sugar 2 eggs 1 teaspoon vanilla extract 1 cup chocolate chips sea salt flakes to sprinkle Instructions 1. Preheat oven to 350 degrees Fahrenheit and line a baking sheet with parchment paper. 2. In a medium bowl, combine almond flour, baking soda, salt and cinnamon, mix together and set aside. 3. In a large mixing bowl add melted coconut oil, sugar, eggs and vanilla and mix until smooth. 4. Add the dry ingredients to the wet ingredients and stir well to combine. Fold in chocolate chips. 5. Form dough into 1 inch balls and place on cookie sheet, sprinkle with sea salt. 6. Bake for 9-12 minutes. 7. Remove from oven and place on a cooling rack. 8. ENJOY!!!!
