INSTRUCTIONS: 1. Mix together the dry ingredients, coconut flour, baking soda, salt, and matcha powder, in a small bowl. 2. In another bowl whisk the coconut milk, eggs, vanilla extract, honey, and melted coconut oil until combined. 3. Add the dry ingredients to wet ingredients whisk to combine until an almost lump-free batter forms. Let rest the batter rest for 10 minutes, this allows the coconut flour to absorb the liquid and thicken the batter. 4. Heat up a nonstick skillet or griddle over low to medium-low heat. Once the griddle is hot, grease the skillet with coconut oil if desired, pour in about 1/4 cup full of batter into the pan. Let the batter naturally spread into a 3 or 4 inch size round. Cook for 2 minutes. The pancakes are ready to flip when bubbles form on top of the surface. Gently flip the pancakes and cook an additional 1-2 minutes 5. Repeat with the remaining pancake batter until all the batter is used up. Enjoy warm! I love these with some whipped coconut cream, raspberries, and maple syrup or honey
