Sugar Free Strawberry Jam! Sweetened with fruit juice! Comment “canning” for more steps on how to can it and see below for the recipe!! Canning does not have to be hard friends! It can be done safely at home. INGREDIENTS 🍓4 cups crushed strawberries ( Even a little more like 4.5 cups is good to ensure you have enough) you don’t need a garlic press lol 2/3 cup unsweetened fruit juice ( I used grape juice for this recipe) 3 Tbsp Ball® RealFruit™ Low or No-Sugar Needed Pectin 4 Ball® Half Pint Jars DIRECTIONS: Prepare boiling water canner. Heat jars in simmering water until ready for use. Do not boil. Wash lids in warm soapy water and set bands aside. Combine strawberries and juice in a medium saucepan. Gradually stir in pectin. Bring mixture to a full rolling boil that cannot be stirred down. Boil hard for 1 minute, stirring constantly. Remove from heat. Skim foam if necessary. Ladle hot jam into a hot jar leaving a ¼ inch of headspace. Remove air bubbles. Wipe jar rim. Center the lid on the jar and apply the band, adjusting to fingertip tight. Place jar in boiling water canner. Repeat until all jars are filled. Process jars for 10 minutes, adjusting for altitude. Turn off the heat, remove the lid, and let the jars stand for 5 minutes. Remove jars and cool for 12-24 hours. Check lids for seal, they should not flex when the center is pressed. When canned and stored properly, this strawberry jam will stay fresh for a very long time. 🌸Chive Blossom Vinegar! It’s a must for me this time of year! Delicious in salads, marinades, and more!! Remove stems Fill desired jar size with washed blooms Cover with distilled white vinegar Store in a cool dark place for 2 weeks Discard blooms Your vinegar is ready!! Have you made this?? I belive in doing seasonal activities that connect us with nature and give us something to look forward to each year. Here’s my weekly recap in pictures! Which one is your favorite?? 1. Ava and Alfie- each day Ava spends time with him and it is the cutest ever 2. The seedlings in the greenhouse are ready to be planted!! If you look closely you can see the guineas through the glass 3. The garden in spring might be my favorite. We’ve got garlic, onions, broccoli, cauliflower, cabbage, beets, carrots, potatoes, lots of herbs, and more currently growing. 4. My friend took this sweet picture of Ava with the goslings we hatched in the incubator. 5. Inside the house we have 2 different brooders and Georgia the cat takes full advantage of warming herself by the light daily. 6. I got some new coveralls from @duluthtradingcompany and they just might be my favorite! 7. Went to the strawberry patch with my favorite girl. It’s a tradition every year. 8. Lots of lettuce growing in the garden and Butter lettuce is a favorite. If you harvest from it regularly you’ll have lettuce for a couple months from the same plant. 9. The outdoor baby goslings a few hours after hatching. Perfection

I feel images of these goslings being born and their mom Gonzetta needed to be a permanent spot on my feed! Don’t you agree?? The 2 male geese have also been the best dads and they’ve even taken in our 2 rescue ducks as part of the family. It’s quite fun to see them all together. What JOY they bring! New baby goslings hatched by Gonzetta the goose! I will never cease to see how amazing animals are and how they care for their young!! We have a total of 8 baby goslings right now! So fun!

Chive Blossom Dip- one of my favorites for this time of year!! It’s SO good! If you don’t have chive blossoms just use chives! 1/2 a cup sour cream or yogurt 2 tsp fresh chives (chopped) 3-4 Chive blossoms 2 tsp fresh parsley (chopped) Pinch of salt 1/2 tsp of garlic powder 1 tsp honey Salt to taste Mix all together and serve with bread, or avocado toast, or on sweet potatoes, etc. Remember that eating seasonal foods is the way to go for all the added health benefits! Also, edible flowers are SO beautiful!
