Sunday Golden Hour Glow, complimentary from @colleenrothschild & @mdsolarsciences ✨ —————- Sunday is a rest day for me, but it wasn’t always like that. I used to think that rest was “boring” (hello, Enneagram 7 here) and that resting meant sleeping all day. So I rarely made time to have rest days (that is, until I burn out and am forced to). But a few years ago, a good friend and mentor of mine shared a totally crazy idea (at least to naive 18 year old me) that not all “rest” has to look the same. Some days, it might actually mean taking a nap. But other days, it might look like going on a walk, or catching up with a good friend, or even watching a movie. Some days can look different from other days - and yet they can be restful all the same. So today, I’m taking a rest day - and what a gift that is! ☀️ I got to slow down and watch the sunrise this morning before going to church. Have lunch date with my husband. Take time to nourish my skin. Listen to worship music. Read books. And spend time in the kitchen baking - not for the blog, not to take photos of, not for anyone else - but just because it makes me happy and thankful and so incredibly content. I’m grateful for a Sunday to reset. is it too early to start posting all the pumpkin recipes?? 🙃 (i found the third photo on my camera roll from fall at @traderjoes last year — and it got me dreaming of all things pumpkin 😍) so last night, i made some overnight Spiced Pumpkin Oats. Warmed it up today, and boy did it hit the spot!! 🔥 RECIPE: - 1 cup rolled oats - 1 1/2 cups coconut milk - 2 tbsp maple syrup/honey - 1/2 tsp cinnamon - 1/4 tsp ground ginger - 1/8 tsp ground nutmeg - 1/2 cup pumpkin puree - 1/4 tsp salt ➡️ i put everything in a jar, gave it a good shake, and let it refrigerate overnight. Then poured it into a bowl this morning and heated it up in the microwave for a quick and easy breakfast! ✅ Topped mine today with some @dvashorganics date syrup 🍯, @traderjoes coconut shreds 🥥, @highkeysnacks snickerdoodle cookies 🍪, and extra chocolate chips! ALL the heart eyes!! 😍😍😍

I remember those after-school days growing up when I would buy all the delicious ondeh-ondeh from the small bakery near my house. I wonder if the bakery still exist all these years later. Sometimes, it’s weird being a TCK. I was born in Indonesia but for over half my life, I’ve lived in the States. So today, I decided to marry the two cultures into a decadent, baked treat - these pandan cupcakes that taste just like ondeh-ondeh, but in fluffy cupcake form! The pandan base is not too sweet (just like my mom likes it!) and has just the right amount of pandan flavor, which pairs well with the delicious sweet toppings ✨ It’s naturally vegetarian, but can easily be made vegan, too!
