New York City is incomparable to any other city in the world. The city hosts some of the most iconic places to visit in the United States such as the Statue of Liberty, Brooklyn Bridge, Times Square, Empire State Building, and Rockefeller Center. There are exciting rides for kids at Circus Circus, not forgetting the New York New York’s roller coaster. With its gorgeous people, amazingly warm weather, and wildlife, it’s not surprising that people often include it on their list of places to visit in the United States.
We had such a great time in Ocala when we visited last summer. I would highly recommend this as an add-on to your Spring Break in Orlando... or spend the whole week here instead of in the crowds. If you’re not yet familiar with Ocala, Florida, make it a part of your vacation next time you’re on your way to Walt Disney World. Even if you opt for a Disney vacation with the family for spring break, take a few days and get away from the crowds in Ocala. We had the fortune to visit here last summer, and I do wish it was cooler when we visited. Spring break makes it a great time of year. One thing I love about Ocala is the horse trails. It is the horse capital of the world after all. We were able to take a horseback ride through Ocala at the Canyon Zip Line Adventure Park. This landscape is so different than the rest of Florida. You will be surprised by the steep cliffs, salty ravines, and tall trees. I felt as if we were horseback riding through Tennessee only with palm trees. Other great highlights in Ocala include Rainbow Springs where you’ll find crystal clear waters, waterfalls, and authentic Florida nature. Also, make time to take a glass-bottom boat in Silver Springs. If your new to the area try to avoid going out too far from your original location, it may be easy to get caught up in the fun and lose your bearings becoming lost in diverse lake systems. It may be helpful to get a kayaker guide to introduce you to the area or peruse through some topographical maps to make sure you know where you are going. As a novice kayaker, you will quickly notice the diverse wildlife that calls the water and surrounding area home. You should also be sure to not leave behind any waste or anything else that could hurt the natural wildlife or the water on which you kayak.
With busy kids, it can be easy to choose convenience over health. And believe me; I get it. Constant meals and constant snacks get exhausting. How often do I need to feed these ravenous little humans? I have performed my best with this incredulous task when I am planned and prepared in advance. Now, I know us moms in the trenches are not always the best at the planning and the prepping, but we at least make an effort. I can get the most out of the day when my kids can be independent. What better recipe to have sitting in a bowl in the fridge than energy bites for kids on the go! This recipe takes about 15 minutes to make and about an hour to chill. (See below for some other option.) 1 cup rolled oats 1/2 cup mini semi-sweet or dark chocolate chips. I prefer dark chocolate and it does have less sugar. 1/2 cup ground flaxseed. This is the power source and it contains healthy fats and lots of fiber. 1/2 cup natural peanut butter. For added crunch, you can use crunchy peanut butter. 1/3 cup local raw honey. You can add less if you want it less sweet. Raw honey is easily broken down by the body which makes it an ideal sweetener. 1 tsp vanilla extract Combine all the ingredients in a bowl and mix up thoroughly. This is where the kids come in handy! Form into 1-inch balls on a baking sheet lined with parchment paper. HOW TO REALLY SAVE MONEY FOR TRAVEL To truly, actually, really save money for travel (yes, that’s a lot of adverbs!) you have to be conscious about where you put your money. It all comes down to budgeting for travel as mentioned above. I use, and highly recommend, a budgeting software called You Need a Budget. The concept is that you give every dollar a job so that when money comes in, you have it assigned to pay bills, save for upcoming expenses, and goals such as travel. If you’re familiar with Dave Ramsey, it’s the same concept and allows me to look at what I have saved for a particular vacation, or what I might have extra to travel with. CREATING A DESTINATION GOAL For example, for an upcoming trip, I’ve set a goal and a date by which to achieve that goal. You Need a Budget lets me know what I need to save each month in order to hit that goal. (Yes, I know basic math would do the same, but it’s nice to see the progress bar!) That goal is a line item in my budget. It’s there staring me in the face because I put it near the top… meaning it’s a top priority after paying out necessities. Each week when I get paid, I take care of all the bills, big savings, kids’ stuff, groceries, etc. Then with whatever I have leftover, it goes to the travel budget. Travel is a priority in our house. Obviously, it is a want over a need. But, it comes before new clothes, toys, or dining out. I love fiddling around with where my money needs to go and how quickly I can reach my goals. It is FUN.
