Puerto Rican Meatballs 🇵🇷 Puerto Rican meatballs or albóndigas guisadas (think carne guisada but with meatballs!) are flavorful beef meatballs cooked in a savory sofrito sauce. INGREDIENTS: For Meatballs 1 lb ground beef 1 egg 1/4 cup milk 1/4 cup sofrito 1/4 cup plain breadcrumb 2 tbsp pimento stuffed green olives, diced 1 tsp ketchup 2 tsp onion soup mix 1/2 tbsp onion powder 1/2 tbsp garlic powder 1/2 tsp ground oregano 1/4 tsp ground black pepper adobo, to taste 2 tbsp olive oil, for frying For Sauce 1/4 cup sofrito 1/2 cup tomato paste 1 tsp chicken bouillon 1 small onion, diced 3 mini sweet peppers, sliced 1/2 cup water 1/2 tsp red wine vinegar 1/2 tsp ground oregano 1 tsp sazón, con achiote 1/4 cup pimento stuffed green olives, optional 1 handful cilantro sprigs, optional The full recipe is on my blog. Watermelon Fries with Coconut Lime Dip Watermelon fries are a fun summer treat! Kick it up a notch by adding some lime juice and Tajin to the watermelon. SAVE this recipe for Memorial Day weekend! Ingredients: 1 watermelon Juice of 1 lime Tajin, to taste Dip 1 cup coconut yogurt 1 tbsp coconut cream Zest and juice of 1 lime Directions: Remove rind from the watermelon. Cut watermelon into fry-like sticks.
 Place watermelon fries on a serving plate. Drizzle with lime juice and sprinkle with Tajin Classic Seasoning.
 Dip In a small bowl, combine coconut yogurt, coconut cream, lime juice and zest.

Activated Charcoal Detox Drink I was feeling under the weather a couple of weeks ago and my body needed a good detox. This detoxifying drink recipe is good for releasing toxins from your body! White Castle Sliders Copycat Recipe 🍔 Who isn’t obsessed with White Castle sliders? They are literally the most delicious, melt in your mouth sliders to ever exist! Here’s how to make these sliders at home. Trust me, this is the real deal recipe! SAVE this for Memorial Day weekend! Ingredients: 2 lbs ground beef 1 packet Lipton onion soup mix 1 tbsp peanut butter 1 tsp onion powder 1 tsp garlic powder 1/2 cup milk 1 onion, finely diced 12 slider or dinner rolls 12 slices American cheese Directions: In a large bowl combine the ground beef, seasonings, peanut butter and milk. Spread the meat mixture on a cookie sheet. Use a rolling pin to roll over the meat and flatten it as much as possible. Bake at 350 degrees for about 10 minutes. Sprinkle the diced onion all over the top. Bake for about 15 minutes. Place the cheese slices on the meat and bake for about 5 minutes. Place the bun tops on the cheese and bake an additional 3-5 minutes. Slice the meat and place sliders on the bottom buns.

Spicy Jalapeño Margarita The classic margarita is a Mexican staple. It originated in Mexico in the 1900s and although stories of its origin are quite numerous, one thing is for sure: it’s a delicious drink that instantly sparks joy. You can be sure margaritas of all variations will be flowing near and far this Cinco de Mayo! I added jalapeño for an extra kick and a Tajin rim which compliments the jalapeño flavor perfectly. Recipe: 2 oz tequila 1 oz triple sec 1/4 cup lime juice 3/4 cup limeade 1/2 jalapeño, sliced Tajin, for rim Lime slices, for garnish Jalapeño slices, for garnish Mint leaves, for garnish Add tequila, triple sec, lime juice, limeade and jalapeño slices to cocktail shaker. Shake it up. Pour into rimmed glass over ice. Garnish with lime, jalapeño and mint leaves. Tip: if you prefer a more spicy margarita, infuse the tequila with jalapeño slices. Churros with guava sauce 🌸 This Cinco de Mayo, I’ll be celebrating with these delicious churros! I recently had them at a restaurant with guava sauce and OMG total game changer! So of course, I had to recreate my own guava sauce at home. The full recipes for both churros and guava sauce are on my blog! Strawberry Cheesecake Popsicles with Banana Bread Biscotti Crumble If you know me, you know I love a good popsicle. These right here are going to be on repeat all summer! Ingredients for Popsicles: 1/2 cup TJ’s Greek yogurt 2 oz. TJ’s whipped cream cheese 1 cup fresh strawberries 1/2 ts TJ’s bourbon vanilla extract Sweetener (optional) Ingredients for Crumble: 6–8 biscuits TJ’s Banana Bread Biscotti 2 tbsp TJ’s butter Directions: Combine yogurt, cream cheese, vanilla extract and sweetener of choice in a bowl and whisk until smooth. Slice strawberries and mash with a fork. Add strawberries to yogurt mixture and fold in gently. Pour mixture into popsicle molds. Freeze for at least 4-6 hours or overnight. Place biscotti biscuits in a large zip lock bag and crush with a rolling pin until you reach your desired consistency. Add melted butter to crumbs and stir to combine. Set aside. Once popsicles are frozen, dip the tip of each popsicle in yogurt and sprinkle the crumble on top. Place popsicles in freezer for about 30 minutes to set crumble.
