Hi, Im Christine. A Texas girl who moved to New York City to exlpore everything that the world has to offer. I love traveling, adventure, and maintaining an active lifestyle. I do love to indulge at restaurants but when I'm not doing that, I am maintaining a healthy lifestyle at home. I do so by focusing on wellness and exercise. Leftovers from a 5 star restaurant? 🤯 No, just homemade leftovers. 😏 I kid, but I am proud of this meal and how it turned out. It was v delicious. For the lamb chops: Mix the olive oil, lemon juice, garlic, rosemary, salt, and pepper. Add lamb chops and turn to coat in the marinade (let sit while ya do your thang to the butternut squash). Then add the marinated lamb chops to a hot cast iron skillet. Cook on one side, flip, and immediately transfer to the oven to finish cooking. Bake in the oven until done. For butternut squash: Peel and cut up squash into cubes. Toss in olive oil, salt, pepper, garlic, rosemary (basically used same sauce as lamb) and then bake until tender and golden brown. If you’re feeling crazy, top with melted butter

Today is National Pumpkin Day! 🎃 Let’s celebrate with Olive Oil Chocolate Chip Pumpkin Muffins. Also, it is fact that pumpkin muffins do taste better when they’re shaped like pumpkins Ingredients:
1 can of pumpkin puree
1 large eggs
1 cup sugar
1/ 2 cup olive oil
1 teaspoon ground nutmeg
1 teaspoon ground cinnamon
1 teaspoon ground cloves
1/ 2 teaspoon kosher salt
1 cup all-purpose flour
1/ 2 teaspoon baking soda Chocolate chips to taste Directions: 1. Preheat oven to 350F degrees and butter your pan. 2. In a large bowl, blend pumpkin puree, eggs and sugar with a mixer until well combined. Add olive oil and mix until fully incorporated. 3. Add nutmeg, cinnamon, cloves, salt, flour, baking soda, and chocolate chips to a medium bowl and whisk to combine. 4. Add flour mixture to wet ingredients and stir with a spoon until just combined. Pour the batter into the prepared pan and bake ~20 minutes or until desired firmness and always a good idea to do the toothpick check.
