Gluten Free Pop Tarts

Growing up my mother never bought commercially made baked goods like Pop Tarts and most of what she baked was on the healthier side. This gluten free version of Pop Tarts is an adaptation of my regular pop tart recipe that was always a favorite for brunch at my restaurant Sweet and sold out every time we made them. As with all of my recipes I have tested these with Cup4Cup Flour, King Arthur Measure for Measure was always a favorite for brunch at my restaurant Sweet and sold out every time we made them.

Chickpea Vegetable Coconut Curry

Add the onions, carrots and potatoes and cook over moderately high heat, stirring, until starting to soften and brown, about 5 minutes. Add, zucchini, garlic, ginger and curry powder and cook for about 2 minutes. Cover and simmer over moderately low heat until the potatoes are tender, about 18 to 20 minutes. Sprinkle the stew with the parsley and serve with warm bread or over your favorite grain.

Cucumber Mango Salad

One of my favorite easy healthy meals is any grilled or roasted protein with cucumber mango salad, in this picture its chicken but equally good with pork, steak or fish. This salad is addictingly delicious and extremely versatile, after you have made it a few times, try subbing out different veggies and fruits based on the season and your personal preferences. Chopped fine this recipe also makes a delicious salsa to serve over any protein or with your favorite chips - add a jalepeno or habenero pepper if you like it spicy.

Healthy Homemade Salad Dressing

The key to making all of your meal delicious is in learning how to season properly and one of the easiest places to start is to master a few delicious healthy homemade salad dressing, sauces and dips that can be used for multiple things. I prefer to keep the fat at a minimum in my dressings and sauces so that I can use larger amounts of dressing to flavor my food without adding crazy amounts of fat and calories. I have found that the tastiest, healthiest way to replace fat in dressings and sauces is to use Neat Egg (chia and garbanzo egg replacer) or straight chia seeds. Once you have made these recipes a few times, start to experiment – use different oils, vinegars, mustards, soy sauce, liquid aminos, herbs etc… to add variety and create your own healthy homemade salad dressing.
