β€’ Mix the peppers and sliced red onion with the olive oil and spread on a lined baking try. In a food processor, combine the chickpeas, garlic, cilantro, chopped red onion, spices and tahini β€’ Pulse 4-5 times until well combined but still chunky. Build your wrap with fresh salad greens, the curried chickpeas, roasted veg, feta, avocado and drizzle with balsamic reduction. For this recipe I opted for grilled halloumi, refreshing tzatziki, a preserved lemon salsa for a real citrus kick and of course – smothered it all in my favorite tahini dressing – recipe here! *Note: Since I didn’t have a food processor to blend up the mixture I needed an egg to help bind it. Add the remaining ingredients (you probably won’t need the egg here) and pulse again until the mixture starts to clump together * Heat 1 T of olive oil in a large pan over medium heat. * Build your lettuce wraps with the falafel and halloumi, top generously with tahini sauce and tzatziki * Combine the preserved lemon, red onion and cilantro and spoon over your loaded lettuce cups.
