My appetite is crankin’, and Aaron, who’s always hungry, has been extra happy to offer up suggestions to get pizza and baked goods. As delicious (and heartburn-inducing) as that sounds, most of the time I do my best to be mindful of what I’m eating, especially now that I’m not just eating for one. I’ve been loving these Carrot Cake Fat Balls for healthier snacking, and I have a handful of new recipes I’d also like to make this month… Green and White Socca Pizza topped with a vegan ricotta, wild arugula, shaved red onion, pine nuts, olive oil, chives, and flaky sea salt.

My First Trimester: Pregnancy Symptoms & Supplements

Now that I’m 24.5 weeks and well into my 2nd trimester/approaching my 3rd trimester (YIKES), I feel like I can pretty accurately reflect on those first few months of my pregnancy. * We were extremely fortunate to get pregnant right away, and despite my early response pregnancy test telling me I wasn’t pregnant at first, I knew immediately that I was. I started to feel low energy around week 4 and exactly at week 6 is when the fatigue and all day “morning” sickness hit me like a ton of bricks. And then, like clockwork (and just like my mom! ), I started to feel more myself again at 12 weeks.

Sweet potato noodles are pretty great all on their own, but the creamy, 5-minute vegan alfredo sauce here is the real star. I have to be mindful of my marinara sauce consumption these days (thanks to non-stop pregnancy heartburn), which is fine by me because I’m obsessed with this easy blender cream sauce. All in, these sweet potato noodles and alfredo sauce take about 20 minutes to make—even less time if you buy sweet potato noodles pre-made at the grocery store. This easy, vegetable-heavy meal uses sweet potato noodles in place of spaghetti, with a 5-minute vegan alfredo sauce that's extra creamy without any dairy.
