The main reasons why I was so reluctant to start earlier, it’s because it’s kind of messy, and it takes time, and I never knew how to use the pulp. I used walnut pulp for this recipe, but any nut pulp will do. The pulp I obtain from the Almond Cow is rather fluffy, and quite different from the dry pulp you get when you use a nut milk bag or cheesecloth. I always prefer a whole food over a refined one, that’s why I use the pulp.
