Gluten Free Chocolate Protein Peppermint Overnight Oats 🍫🎄 Even though I’ve been in the Christmas spirit since November 1st I’m slowly getting around to sharing some FESTIVE recipes 🎅🏻 FOR OATS 1/2 cup certified gluten free oats 1 tbsp cacao powder 1 tbsp maple syrup 1/2 cup almond milk 1/8 tsp peppermint extract 1/2 scoop chocolate protein powder (I love @pescience Chocolate Truffle - use code BAILEY at checkout to save $$ on all products) WHITE CHOCOLATE SHELL 3 tbsp white chocolate chips, melted 1 tsp coconut oil, melted 1 candy cane, crushed DIRECTIONS 1) Add all oat ingredients to a bowl or jar. Stir well and refrigerate for minimum 2-3 hours or overnight. 2) Once oats are set, microwave the white chocolate chips and coconut oil in microwave. 3) Pour chocolate over top the oats, then sprinkle crushed candy canes evenly. 4) Put oats in freezer for chocolate to solidify. This will take about 10 minutes. WEEKEND PLANS INCLUDE - hashbrown avocado toast & golf 🥑⛳️ MOVE OVER regular avocado toast 🍞 we’re making room for the new and improved hashbrown avocado toast 🥑 🥔 I’m usually such a creature of habit, and have the same or very similar breakfast every day. But lately I’ve been trying a bunch of new breakfast and I am lovinggggg it! Basically instead of using regular old bread for your avocado toast, try using hashbrowns instead 💯. DIRECTIONS - 1) Air fry hashbrowns at 400 for 12 minutes. 2) Remove from air fryer and top with mashed avocado (season and spice it up as you wish - I used salt, pepper, lemon juice and cumin). Then added some shredded cheese (optional) and 2 over easy eggs. Everything but the bagel seasoning (duh) and served with two slices of bacon (duh x2). these crostini are the perfect combination of sweet, savoury, and are packed full of flavour in every bite! I had many other breakfast options like my Superfood Protein Breakfast Cookies and my Vegan Banana Chocolate Chip Sheet Pan Pancakes but nothing with a bit of a savoury twist on it! I went a little light on the cream cheese for each slice to give it a good jam to cheese ratio but feel free to slap a thick slab of it if you prefer. I just love all of the different flavours and textures in these crostini: sweet, savoury, cheesy flavours.
They feature tofu scramble, avocado, salsa and cilantro for a healthy, filling plant-based breakfast that’s quick and easy to make. this gives it the very "eggy" taste, however you can use regular sea salt instead Mash and crumble the tofu with a fork (or alternatively pulse a few times in a food processor until it is crumbled, making sure to leave some big clumps). Add the tofu to the pan, as well as the nutritional yeast, paprika, turmeric, garlic salt, chili flakes, black salt, pepper, and dijon mustard. Assemble your breakfast tacos with the Untortillas, tofu scramble, avocado, salsa, cilantro, and vegan chipotle mayo!
Once your shortbread base is done baking, make your caramel layer by mixing cashew butter, coconut oil, maple syrup, and vanilla in a medium size bowl. Pour your peanut butter layer on top of the cooled shortbread cookie layer, and then place it in the fridge to solidify for about 30 minutes, or freezer for 15 minutes. Once the crust is cooled completely, pour the caramel filling over the crust and let cool in the freezer to set before topping with chocolate layer. Once the caramel layer is set, pour about HALF of the chocolate layer over the caramel layer.
