These early days of the 1980’s were ripe with imagination, playing with neighborhood kids, exploring front yards and getting nearly lost in complete wonder in the back parts. These kids are humanity’s future and it is our responsibility as parents and elders to take a stand against social apps and large tech companies selling humanities wellbeing. Social platforms eat away at authentic connection albeit there are many internet tools that create a bridge to deeper connection. Kids, adults, human beings need to be in connection, need to know they are loved and need to be inspired by the world around them but there are countless ways of providing these needs without playing a part in an experiment such as social media which has gone too far in controlling our behaviors and mental and emotional landscape.

Luckily, sweet potatoes and lentils have long been on my weekly meal prep rotation allowing me to make meals in a flash. Truth be told I’ve been making several meals every day, and my inspiration in the kitchen has been heightened in these uncertain times. 3 Tbsp olive oil 1/2 diced yellow onion 2 Tbsp minced garlic 2 1/2 cups steamed lentils 2 cups fresh spinach 1 loose cup cilantro 1 1/2 tsp smoked paprika Salt and pepper 1-3 tbsps water to deglaze pan (scrape up all the yummy brown bits).

To make the crust: Place dates, pecans, almonds, cinnamon, and vanilla bean powder in a food processor and process until a fine crumble forms and sticks together. To make the filling: Place cashews, cacao powder, almond milk, agave nectar, coconut butter, coconut oil, and cold-pressd coffee in a blender or food processor and process until smooth. Cold brewed coffee is made from steeping coffee grounds in room temperature or cold water for 12 hours or more, resulting in a coffee concentrate. Many coffee cafes and markets sell cold brewed coffee or you can make it yourself using coarsely ground beans and a ratio of ⅓ cup coffee to 1-1/2 cups filtered water.
