Confessions of a Cookbook Queen

I’ve been absent for a hot minute. And so many of you have checked on me! Please know that while I haven’t been responding to your messages, I have super appreciated knowing that you’re thinking about me

CELEBRATE THE HOLIDAYS AT DISNEY WORLD!

I’ve had the opportunity to be hosted by Disney World for the past few years, always in late September, and I’ve never failed to be amazed at the festive touches throughout the parks. Held after normal park hours, the entire park is transformed into a special night of trick-or-treating, a parade featuring all of our favorite villains, and tons of fun and exclusive treats for sale. Not only are the shops full of fun themed merchandise and cozy Fall treats, but the detailed decor you expect at Disney World is definitely carried over without exception. It’s my absolute favorite time to visit Disney World!

Protein candy, protein cookies, protein bars…they taste good for about half a second and then my mouth feels like it’s filled with sawdust and sadness. However, there are no E-Meter’s involved, so it’s most likely a harmless cult with a lot of muscles and protein but no human sacrifice or forced manual labor. One of my favorite gym friends, BJ (giver of simple wisdom and always willing to spot me or help me when I don’t know how to do a particular lift), recently mentioned that he wished there was a good oatmeal cookie with protein in it. In the bowl of your mixer, beat butter, peanut butter, and brown sugar on medium speed until fluffy, about 2 minutes.

Give your breakfast an autumn-inspired spin with this Pumpkin Spice Granola. Top your morning yogurt with this lightly sweet treat for a filling and delicious way to start your day. I am jumping on the pumpkin spice train with some pumpkin spice granola. But it’s low in sugar and great on a big ol’ bowl of protein packed Greek yogurt!
