Turmeric Garlic Ginger Coconut Soup

This dish was inspired by my craving for curry on a chilly winter day. The taste reminds me of a warm Thai curry with the coconut cream. I decided to top this noodle soup with some seared salmon, but you could feel free to poach the salmon right in the soup itself. Serve in a bowl topped with avocado, seared salmon, tomatoes, Kale chips, sautéed mushrooms, cilantro, cabbage and scallions.

Kale Parsley Pesto

Happy Monday loves! I hope you all had a wonderful weekend!! Been a busy morning, and this meal took like 15 minutes, so That’s a win in my book! Came home and BAKED this cauliflower gnocchi from TJs and thawed out some langostinos…the rest came together in no time! And I have leftovers! Process in @mealthy hand blender and blend until smooth.
