Although there have been many wonderful dining experiences, there is only one destination that had food so incredible that it could take center stage along with visiting one of the Wonders of the World. For the food-novice like me, Cerviche is a Latin-American (Peru may actually be the origin) typically made from fresh raw fish cured in fresh citrus juices and spiced with ají, chili peppers or other seasonings including chopped onions, salt, and coriander. We do have to confess that although there were opportunities to try some local dishes like Cuy (guinea pig), llama, or alpaca, we just couldn’t. The fusion of cultures and cooking from all over the world seems to melt in a perfect mix of tastes that few places in the world could provide.

Not only because Rovaniemi is the gateway to the Arctic, but just on the other side of the line marking entering the Arctic is Santa’s Workshop Village. Right next to Santa’s Workshop Village was our hotel, Santa’s Igloos Arctic Circle. Getting the chance to stay in an amazing glass igloo right next to Santa’s Workshop Village was the best. As a bonus extra special dinner one night, we traveled to another of Santa’s Hotels located in central Rovaniemi to eat at Lappish Restaurant Gaissa.

Mount Aspiring National Park is situated on the southern end of the Southern Alps and is the third-largest of New Zealand’s parks. The other way to access Mount Aspiring National Park is via 20 miles of rough dirt road complete with countless stream crossings. Aoraki/Mount Cook National Park is home to 19 peaks over 3,000 meters (9,842 feet) including, of course, Mount Cook which is the tallest mountain in New Zealand at 12,217 feet. This time, I headed up to check out Mueller Hut, which lies at about 5,925 feet and has spectacular views of Mount Cook and also of Mount Sefton just across the valley.
