Hi! I’m Marc Matsumoto, a food blogger(https://norecipes.com), TV host(https://www3.nhk.or.jp/nhkworld/en/tv/bento/), and food consultant, and I’ve loved to cook since before I could see over the kitchen counter! I know that not everyone feels the same way about cooking, which is why I founded No Recipes: to elevate everyday meals by making the preparation of delicious wholesome food accessible and interesting to people of all skill levels.

This site has over 1000 easy to follow step-by-step recipes with the dish’s background and photos so that you learn the why behind basic cooking techniques, not just the how. My goal is to give you the confidence and inspiration to have fun in the kitchen!

Japan has a whole family of sweet and savory sauces that evolved from Worcestershire sauce that are collectively referred to as ソース (sōsu). Tastes vary by brand, but the difference between them is mainly the viscosity, with Usutasōsu (Japanese Worcestershire) being the thinnest, Chunou somewhere in the middle, Tonkatsu sauce on the thicker end, and Okonomiyaki/Takoyaki sauce being the thickest. It's not difficult to make these at home, and the results are way better than the store-bought versions. MISO DENGAKU RECIPE BELOW Despite being an island nation with less land than California, Japan has 47 prefectures, each with a unique history and culinary culture. This regional cuisine is known as Kyōdo Ryōri (郷土料理), and I’m partnering with @our_regional_cuisine to share my take on a few of these gems with you. This dish is based on Miso Dengaku, a specialty of Aichi Prefecture traditionally made by spreading a sweet miso glaze on grilled tofu. You can check out the site linked below for the original recipe, but for my take, I’ve fried the tofu until it’s golden brown and crisp outside while remaining soft and creamy in the center. Topped with a sweet and savory miso glaze, it’s a mouthwatering treat that will make you rethink everything you thought you knew about tofu. 2 blocks tofu (340 grams each) 100 grams red miso 55 grams sugar 3 tablespoons dashi 1 tablespoon mirin Whisk the miso, sugar, dashi, and mirin together until smooth. You can use a stick blender to puree it for a smoother texture. Cook the mixture over medium heat until it’s thick and no longer smells like alcohol. For the tofu, cut it into bars that are about 1 inch thick and drain on paper towels. Heat a pot with 2 inches of oil to 360°F (180 °C). Lower the tofu into the oil and fry until it’s golden brown on one side (5-6 minutes). Flip the tofu and continue frying until it’s crisp and evenly brown. Drain the tofu and skewer, then spread some dengaku miso on top. Garnish with toasted sesame seeds.
