Highlights
Salted Tahini Choc Chunk Cookies Recipe

I’m talking tahini, olive oil (yes, in cookies!), oats and, of course, chocolate. I share some of my favourite dairy free chocolate brands in my recipe for Gluten Free, Vegan Double Chocolate Chunk Cookies. I like my desserts on the slightly more savoury side, and I’m totally obsessed with how the rich flavours of the tahini and olive oil complement the bitter dark chocolate. Because of the wholesome & high-fibre ingredients, this recipe is perfect for school lunch boxes or a 3pm treat at work.

Vegan Zoodle Spaghetti Puttanesca Recipe

By combining zoodles with regular noodles, you get the best of both worlds – a little nutritional boost & extra greens with all the comfort of ‘real’ pasta! I like to use a pulse based or wholemeal pasta option to increase the fibre and plant-based protein in this recipe. Although I’m sure that any true Italian would roll their eyes at me for calling this recipe spaghetti puttanesca, this traditional combination of tomato, olive and chilli is always a winner. The olives provide the same salty kick as the anchovies, and I’ve used semi-sundried tomatoes instead of tinned tomatoes for a stronger, herbier result.

Gluten Free Vegan Double Choc-Chunk Cookies Recipe

These cookies are particularly delicious, and happily suitable for almost everyone as they’re gluten free, vegan, nut free and relatively low sugar. White chocolate, toasted walnuts or hazelnuts, or even chopped up glacé cherries would all be delicious with these flavours. A lot of ‘regular’ chocolate bars with a high cocoa percentage are actually vegan. Double check the ingredients to make sure, but these options are often cheaper than specialty branded vegan chocolate.

24 Hours in Bondi Beach: the Healthnut's Guide

Choose from one of their menu options (I always get the Tokyo Tamari bowl or the OG) or make up your own bowl with ingredients like avocado, wasabi peas, kale and ponzu dressing. Build your own hearty salad bowl or choose from their menu of Middle-Eastern inspired salad bowls like the Earth Bowl or the Chickpea Bowl. Turn right when you leave Fishbowl and head to Gould Street for a little shopping, stopping in at Lululemon Bondi Beach on the way. On Gould Street, pop into the Tuchuzy boutique to pick up some fresh activewear from local label P. E Nation or head next door to Le Labo for the most deliciously scented candles and fragrances.
