Oatmeal Bars - These oatmeal bars bridge the gap between granola bar and cookie with their soft and chewy texture and simple ingredients. I’ve been sneaking little squares into my kid’s lunch boxes for a sweet treat surprise they love and I feel good about giving them. With the help of @SunButter’s (#ad) creamy sunflower butter, they happen to be gluten free, dairy free, and nut free but you’d never know. Ingredients * 2 eggs * ⅔ cup maple syrup * ½ cup SunButter - no sugar added * 3 tablespoon avocado oil - or other neutral oil * 2 teaspoon vanilla * 1 ½ cup quick oats * ½ teaspoon sea salt * ½ cup mini chocolate chips Preheat oven to 350 F. In a large bowl, mix together the eggs, maple syrup, SunButter, avocado oil, and vanilla until well combined. Fold in the quick oats, sea salt, and mini chocolate chips until the oats are well coated. Line a 9 x 9 baking pan with parchment paper. Pour the oat mixture into the baking pan. Use a rubber spatula to level off the batter. Bake it in the oven for 24 - 28 minutes until the oats on top are golden brown. Allow the bars to cool down before slicing them into squares and enjoy! Frozen Chocolate Greek Yogurt 🍦 - If you enjoy a delicious frozen treat on a warm day that happens to pack a protein punch, you need to give it a try. Welcome to episode 1 of my new series…”It’s Greek Yogurt”. Where I’m sharing recipes that are, yes, made with greek yogurt, but in an unconventional way so that, for instance, when someone enjoys a spoonful of this frozen treat, and they ask “wow what is this?!” You’ll reply with…”it’s greek yogurt”. Follow along to see what other recipes can be made even better with greek yogurt. RECIPE is on my website (comment “RECIPE” and I’ll send the link straight to your inbox!) or bookmark it below! 3 cups greek yogurt - plain and unsweetened 1 cup cocoa powder ½ cup almond milk - plain or vanilla and unsweetened 1 Tbsp vanilla extract ⅔ cup maple syrup Pinch of sea salt Place all ingredients in a blender and blend well until the mixture is running smooth in the blender and the cocoa is well incorporated. ICE CREAM MAKER - Pour the mixture into an ice cream maker and churn as directed by your maker’s instructions. This recipe takes about 15 minutes to churn in my KitchenAid ice cream maker. It will begin to thicken into a soft serve consistency and firm up a little more with time. If you’re serving this as soft serve, go ahead and serve into ice cream bowls. If you want a thicker, more traditional ice cream consistency, scoop the frozen yogurt into an airtight container or into a pan lined with parchment paper. Be sure to wrap the pan tight with plastic wrap to prevent freezer burn. Place the container in the freezer to firm up for at least 30 minutes. NO CHURN - Pour the mixture into an airtight container and store in the freezer overnight. Allow the frozen yogurt to thaw slightly before serving. Top with desired toppings and enjoy! Teriyaki Salmon Rice Bowls - With over 100 5 star reviews, this teriyaki salmon rice bowl is a must add to your weekly rotation. I mentioned previously that I make salmon at lest 3 times a week and this is one recipe that is a staple in our house. From start to finish, this dish takes about 15 minutes to whip up so it’s perfect for those use nights where you don’t feel like cooking for an hour but still want to provide a wholesome meal for your family. The salmon is cut into bite sized cubes, tossed in an easy teriyaki marinade, and air fried for 7 minutes. This gives you just enough time to cook some brown rice and whip up a chipotle yogurt sauce.
