Candy Cane Cookie Ice Cream Pie Blog

Here’s a good plan: Layer the ice cream, watch an episode of your current favorite show, top it off with the whipped cream and binge for another two hours while the pie freezes. After that, it should be all frozen and ready to devour and you’ll be ready to binge the rest of that bake-off season you’ve been wanting to watch (except this time it’s better because pie). MI-DEL® makes it super easy and convenient to make this amazing gluten and dairy free holiday dessert with their incomparable pre-made gluten free chocolate snap crust as well as their chocolate sandwich cookies. The crushed MI-DEL® chocolate sandwich cookies mixed with my microwave hot fudge make the perfect crunchy but gooey chocolate center in this candy cane cookie pie and will leave everyone asking for another slice!

Caramel Apple ‘Spider’ Pie Blog

Finally, the sweet, creamy filling is tucked into the MI-DEL® gluten free graham crust and decorated with the most delicious spider web caramel topping and cute, spooky MI-DEL® cookie spiders! In a medium saucepan, stir together 3 cups peeled, cored, and diced apples, 1/2 cup of apple cider, 1 tablespoon Chatfield’s® Date Sugar, and 1/4 teaspoon cinnamon. Whisk together 1/2 cup date sugar and 1/3 cup + 1 tbsp water in a small saucepan until completely combined. All spider webs are unique and it’s still going to taste delicious any way you slice it For an extra dose of spooky fun, finish decorating with these cute and easy MI-DEL® cookie spiders!

Caramel Apple Spider Pie

Fold in the completely cooled apple mixture into the marscarpone/heavy cream mixture just until combined. Tip: You can think of folding in as lifting up from the bottom and then carefully cutting through the middle of the mixture until everything is combined. It helps to envision that there are tiny air bubbles in the mixture and your goal is to to keep the air in the mixture and not deflate it.
