The third @thomasdambo troll we found was Jakob Two Trees. He’s fairly easy to find near the Issaquah Community Center, down the Rainier Trail, just past the dog park. Just follow all the people 😂 It’s a paved path, so easy to access for people of all abilities! Jakob stands around 14-ft. tall, looking down at passersby who walk near him on the trail. He is the first troll to have a ponytail, with a band made by the Snoqualmie Tribe holding his hair in place. He wears a necklace of birdhouses over his fur, inviting forest creatures to come spend an afternoon with him. If you’re in the area, I highly recommend finding all the Thomas Dambo Trolls as you explore!

When we head back to Japan next year, we’re going to spend more time in Kyoto. There is so much to see and do there, I could spend weeks exploring the city! The Kiyomizu-Dera Temple is well worth the walk up the hill to visit. We paid the (inexpensive) entrance fee to visit the temple and see the amazing views of the city from up there. You walk through these little bells on your way into the temple and it was a magical way to start touring the temple grounds. We will be back on our next trip ☺️

I’m probably headed to Disneyland 😂 @alaskaair always coming in with the spectacular views 🙌😍 I mean, I’m pretty sure @alaskaair, @disney and @costco is where the majority of our money goes 🥴 Especially when you’re traveling and feeding 8 people!

I heard this sound and decided it had been a long time since I’ve done an introduction post. So a little about me: I’m obsessed with Disney. We’re Magic Key Holders at Disneyland. DVC owners. Can be also found at often at Disneyworld. Not to mention an occasional Disney Cruise, trip to Disneyland Paris or Tokyo Disneyland! I *Love* to Cook & Bake - I’m often sharing recipes and what I’m cooking or baking in my stories! Costco is my favorite store. I could live at Costco. We travel *often* as a family. Sometimes we’re on a plane twice a month. We head to Hawaii every winter. Need some beach therapy at least once a year! We’ve been to many of the National Parks in the USA. We’ll get to them all someday! I’m a mom to 6 kids - yes 6 kids! And we do take them everywhere we travel! We have a couple of special needs kids and have experience dealing with therapies, specialists, and navigating getting their needs met! My house isn’t curated, perfectly clean or decorated. My kids don’t dress in neutral colors and I couldn’t care less about an “aesthetic.” I LOVE exploring and living in the beautiful PNW. We live in the foothills of the Cascade Mountains and I love it. I NEED to live near both the mountains and the ocean. I love a good hike to a waterfall or to find trolls 😉 (see previous reels)

As soon as one Disney Trip ends, I’m planning the next one (or 5!). Our Disney schedule for this calendar year: Disneyland (several trips), Disney Aulani (Hawaii), Disneyland Paris, DisneyWorld, and a Disney Cruise 🙌

2023 brought lots of travel, another HS graduation/starting college, life changes, and missing Kid 1 as she serves her mission in Arkansas. Our youngest started Kindergarten. I started with multiple volunteering jobs to help ease not having a little one home with me anymore after 21 years! It was a year with many highs, some lows, and lots of mixed emotions ☺️ Travel: Disney Cruise to Mexico, Hawaii (Big Island), Universal Studios Hollywood (Super Nintendo Land), London (Windsor), Paris (Disneyland Paris), Japan (Tokyo, Kyoto, Osaka, Universal Studios, Tokyo Disneyland & Disney Sea). Multiple trips to Canada (Vancouver) and Oregon. Plus wandering around getting to know Washington better! We have big plans for 2024 (including reactivating our Disneyland Magic Keys & traveling to 6 countries!)

Fork in the Road

On the last day of our vacation (a Friday), Joseph’s boss messaged him (she is awesome by the way) and asked if he had talked to his old boss lately (who had left the company and went back to their previous company)… Ummm…. New dreams and plans would need to be made, but it doesn’t mean there isn’t mourning over what could have been… After Thanksgiving, we got the results from his interviews (at his now current company)… Their hiring committee came back inconclusive and the recruiter knew something probably was off. This job offer was BETTER paying than the job he just lost, but was this the BEST job for us? … It seemed like a long process, but because he did this 4 years ago, he actually skipped a few steps in their process (which considering how long the process is, seems crazy to me).

Kitchen Sink Cookies

The caramel gets hard again when they are cool, so I suggest just making as many as you will eat warm, and then scoop the rest of the dough and put it into the freezer for later! My husband was afraid of the pretzels in the freezer, but they tasted great cooked from the freezer! The first step is to make the 1 cup of butter into brown butter. Add the brown butter to the brown sugar and granulated sugar.

Ham & Cheese Noodle Gratin (Schinkennudeln)

We had this dish at the Food and Wine Festival in Epcot and fell in love with it! My husband also travels to Germany often for work, so this was a dish we wanted to learn to recreate! * 1 box of pasta (we used elbow, because it’s what we had, but egg noodles would work well) * 1/2 – Remove foil and add the rest of the cheese and bake another 10-15 minutes.

Coconut Lime Pie with Ginger Cookie Crust

* Toasted Coconut to taste for the top of the pie Crush or use a food processor to turn ginger snap cookies into crumbs (I didn’t measure how many cookies I used, just used most of a bag). Press the buttered crumbs into the bottom and sides of a pie pan and bake 7-10 minutes until a uniform crust forms. When ready to serve, place the rest of the can of cream of coconut, whipping cream (2 cups for lots of whipped cream, 1 cup for a more even ratio), and 1 tbsp of powdered sugar into a bowl and whip until stiff peaks form (best done with a mixer). Then place the coconut whipped cream on top of the chilled pie filling.
