It’s almost Lunar New Year and I love seeing the way the holiday has become more and more celebrated 🧧🏮🌕✨ It’s a big time of year because it’s celebrated in all three of my cultures and having spent a good chunk of my life living in Asia, I’m used to seeing the country celebrate for almost a month with time off of school. I’m grateful to see 红包 at major retailers like @target, brands leaning into the Lunar New Year spirit and people excited to try 잡채, れんこん and 年糕—I never really thought I’d see it to be honest. Matcha Sago made with a base of soy milk–the ultimate plant milk in my opinion! #ad I’ve loved soy milk since I was a little girl and I still love it today because it’s creamy, flavourful, neutral in taste (which makes it the perfect base for so many recipes) and you get a nice amount of protein in every serving for extra health. I made sago with a base of @myvitasoy Vitasoy Plus Milky soy milk and topped it off with a sweet coconut whipped topping so that it still has the fragrant coconut flavour but lightened up a little! You can find Vitasoy at your local Asian grocery store 🥛 I’ve loved soy milk since I was a little girl and I still love it today because it’s creamy, flavourful, neutral in taste (which makes it the perfect base for so many recipes) and you get a nice amount of protein in every serving for extra health. 用植物奶做抹茶西米露- 豆奶是我的不二首选!#广告 我从小就非常爱喝豆奶,直到今天我还是非常喜欢,因为它奶香四溢、美味可口、口味适中(所以非常适合作为各种食谱的基底) ,而且豆奶中含有大量蛋白质,能帮助身体变得更加健康! 西米我选用了@myvitasoy Vitasoy Plus 豆奶做为基底,然后在表面淋上一层香浓的椰浆,这样既保留了椰子的香气,也让口感变得更加轻盈! 现在,在你附近的亚洲超市都能找到 #vitasoy 哦~ Ingredients 1/2 cup tapioca 5 cups water 2 cups soy milk 1/4-1/3 cup coconut sugar pinch salt 1 tsp vanilla 2 tsp matcha powder, ceremonial grade Cream Top 1 can full fat coconut milk (refrigerated) 1-2 tbsp maple syrup, to taste 1/2 tsp vanilla extract pinch salt Boil tapioca according to package directions. Once cooked, immediately strain and rinse with cold water. Return to the pot along with soy milk, coconut sugar, salt and vanilla. Bring to a boil then lower to a simmer. Sift in the matcha powder and cook until the mixture thickens. Whip together the cream top layer of the refrigerated coconut milk with all remaining ingredients. If your goal is to eat more plants this year, I’m here to help! #ad These are some of my best tips (as a vegan of almost 8 years) to help make the transition easier and more sustainable with the help of @wholefoods Whole Foods is a haven for anyone with a specialty diet and particularly for vegans, with great seasonal produce and all the plant-based alternatives you could ask for, and I’m excited to be working with them to share these tips to Jumpstart January: 1. Start with plant milk (or another ingredient you use every day). It might not seem that impactful but finding a swap for something you consume daily will really add up in the long run, and it’s a great place to start. 2. Treat your vegetables right. Think about applying the same care and technique to cooking vegetables as you would animal protein. Seasoning is important and you can do a lot more to a vegetable than just a simple roast or sauté. 3. Look for alternatives to recreate your favorite meals. Making a huge lifestyle change can be overwhelming so start with what feels familiar and go from there. 4. Think about ADDING instead of taking away. A simple mindset shift will help you think about the abundance of plant varieties instead of focusing on what you “can’t eat.” Apply this to the plate too—start by adding more plants to crowd out the meat and take it slow. 5. Make sure your nutrient needs are being met. I recommend taking a B-12 supplement to make sure your bases are covered.
