Gluten Free Instant Pot Beef Stew

This Instant Pot Gluten Free Beef Stew recipe can also be made with regular flour and regular beef stew seasoning mix. Since my husband has Celiac and anything I make for him has to be Gluten Free, I found a Gluten Free Beef Stew spices mix from McCormick (this isn’t a sponsored post, I just was thrilled to find a gluten free spice mix). If you don’t want to make this in your instant pot or make it gluten free, you can either adapt this recipe by cooking it for 2 hours on your stove or using non-gluten free flour and a regular spice mix. 2-one pound packages of beef stew meat (I used Angus beef chunks) 1 onion 1 cube of garlic 4 tablespoons of any gluten free flour (I like Bob’s Red Mill 1-1) 6-8 large mushrooms (I used Baby Bella) McCormick Gluten Free Beef Stew Seasoning Mix – note, it’s pricier on Amazon, look for it first in your local supermarket.

Instant Pot Red Lentil Soup with Kale

You’re going to gather onions, carrots, and celery, olive oil or oil spray, basil, oregano and thyme, red lentils, kale and water. 1 teaspoon salt (I like kosher or sea salt) 2 cup red lentils (I rinse them in a mesh colander) 8-10 cups water 1/2 lb of kale, or substitute fresh baby spinach or frozen chopped spinach, escarole or swiss chard (cut into bite size pieces). Then add your spices, rinsed red lentils, and 6 cups of water.

You will need a finger pricker, test strips (even if your child is on a Dexcom CGM), a pen or an insulin vial or two (in case one goes bad), fast acting sugars for lows, syringes in case you need to inject insulin, alcohol pads to wipe down skin, either Glucagon or Baqsimi (for emergencies), and extra insulin pump supplies in case a pump goes bad or expires).
