Happy #tikituesday everyone! 🍹 • Are you familiar with the Monstera plant? 🌱 • It’s full name is the Monstera Deliciosa and it is called a Monstera because the leaves can grow to “monstrous” size! • These plants are very prolific in our area of Hawai’i and we have many in our yard. It is one of my wife’s favorites, which means we also have many Monstera themed items around the house. • It is sometimes called the “Swiss Cheese Plant” due to the holes that develop in the leaves (I personally think these look like eyes, thus lending more to that monster thing...😉). It is also called the “Fruit Salad Plant” as it produces a fruit (that pine cone looking thing) that is supposed to taste like a combination of banana, mango, guava, pineapple, and more! Unfortunately the ones we grabbed are not ripe and are toxic at this stage. Hopefully I’ll get a chance to try one of these amazing fruits in the future! • In honor of this fruit I created a cocktail that combines many of these flavors. Aloha! Happy National Mai Tai Day! 🍹 I’m taking some shortcuts by using the Trader Vic’s Mai Tai mix which lets your just add rum and lime juice to create you Mai Tai. Happy Mai Tai day!🍹 • I thought it would only be appropriate to finish off the countdown with the original Mai Tai created by Trader Vic himself! • I’m not going to go into any lengthy history here as that has been done many times before. Suffice to say this is the heart of the modern Mai Tai and holds it’s own today just as it did in 1944. 😀 • What’s your favorite Mai Tai recipe? 🗣️ • Cocktail: “1944 Mai Tai” Glass: Double Old-Fashioned / Mai Tai • Ingredients: 1oz / 30ml fresh lime juice .5oz / 15ml orange curaçao .25oz / 7,5ml orgeat syrup .25oz / 7,5ml sugar syrup 1oz / 30ml dark jamaican rum 1oz / 30ml aged martinique rum • Preparation: Shake well with plenty of crushed ice. I had been reading the history of the original Mai Tai and playing with recipes based on those. It was the first time I had bought a bottle of falernum. I was diving into a whole new world of drinks I had never really explored. After trying out a number of different recipes, as well as a nice variety of Mai Tais at restaurants here on the Big Island, I settled on concoction that I felt captured both the nostalgic and Hawaiian versions of the cocktail. Let’s countdown to Mai Tai day with a delicious recipe every day! 🍹 • Have you ever seen a drink post and immediately reshaken it? ⚡️ • It’s happened to me a few times, especially if you post a delicious drink right around the time I am about to make a cocktail! 😂 • When my amiga Jes (@the.sauceress) posted this delectable Mai Tai I had pretty much all the ingredients and just had to try it pronto! 💨 • I’m a sucker for anything Mai Tai and love a boozy and juice filled mega drink! With guava, pineapple, and mango this hits all the tropical notes. The use of spiced rum provides a lovely, sweet depth that you wouldn’t typically find. The Creole orgeat provide even more spice and everything melds together so splendidly. 🤤 • I wasn’t really even intending to post this and just took a quick picture to post on my story. It ended up coming out so nicely that I decided to share. Let’s countdown to Mai Tai day with a different recipe every day! 🍹 • A friend asked me a while back to make a special cocktail that was inspired by the mahi-mahi. 🐠 Since the mahi-mahi has a very distinctive appearance, the drink would need to be very colorful as well. 🎨 • This Mai Tai version is so fun and tasty. I’d love to see it on a menu someday. 😌 • Cocktail: “Mahi-mahi Tai” Glass: Hurricane • Ingredients: 1oz / 30ml light rum 1oz / 30ml aged rum 2oz / 60ml pineapple juice 1oz / 30ml orange juice .5oz / 15ml fresh lime juice .25oz / 7,5ml orgeat syrup .5oz / 15ml melon liqueur .5oz / 15ml blue curaçao • Preparation: Fill the glass with ice. Aloha! Let’s countdown to Mai Tai day with a different recipe every day! 🍹 • I always feel like a Mai Tai needs at least 3 rums. For this one I am using a gold rum, a dark rum, and coconut rum. I thought a combination of tropical juices would be a nice change. The rest is what I would consider standard recipe. 😉 • One note on the Kula dark rum. It is made in Maui and perfect for Mai Tais. It had a slight coffee taste which added that great hint of flavor to the overall drink. • Cocktail: “Tropical Tai” Glass: Collins • Ingredients: 1oz / 30ml gold rum @koloarum 1oz / 30ml dark rum @kularums 1oz / 30ml pineapple juice 1oz / 30ml guava juice .5oz / 15ml coconut rum @koloarum .5oz / 15ml orange curacao @de_kuyper_cocktails .5oz / 15ml orgeat syrup @tradervicsworldwide .5oz / 15ml lime juice • Preparation: Add all ingredients to shaker except dark rum. It’s a fantastic take on the traditional Mai Tai and features two of Kuleana’s rums. Today is another delicious fusion…Mojito and Mai Tai. 🌿 • Both of these drinks already have a rum base, lime juice, and a sweetener. This made it fairly easy to just take ingredients common to both and use them together. 🤲 • There are so many possibilities here using different rums and bringing in some fruit flavors. Aloha! Let’s countdown to Mai Tai day with a delicious recipe every day! 🍹 • I had long wanted to get my hands on a bottle of Kō Hana rum, but it can be a bit pricey. However, it recently has been on sale for almost half price! 🤑 • That being the case, I grabbed myself a bottle of their Cacao & Honey infused agricole rum! This is super delicious with that rich cacao flavor and sweet local honey. The rum itself is top quality and comes in a beautiful glass decanter style bottle. 🤩 • This rum inspired me to create a sweet Mai Tai highlighting both the honey and cacao flavors. I chose passion fruit juice for its bright, sweet zing, and Licor 43 for that velvety goodness! Standard Mai Tai ingredients of light rum, fresh lime, and orange curaçao are present, but I swapped out orgeat for honey. 🍯 • I tried a couple combinations before I settled on this recipe, but one that you also might enjoy is using the Kō Hana Kea (unaged agricole rum) in place of the Plantation. Let’s countdown to Mai Tai day by trying a different recipe every day! 🍹 • It’s true that not all Mai Tais are created equally…but this one is! ⚖️ • During my recent fascination with equal parts cocktails I decided to try an all equal parts Mai Tai recipe to see if it would work. Great news…it’s fantastic! 🤩 • I really feel like the Mai Tai recipe lends itself to an equal parts template, especially if you are splitting up the rums. The fun part here is that you can change out the rums and make a different version each time. 🥃 • For this inaugural version I am using all rums from Koloa Rum Company here in Hawaii. They are the “Spirit of Aloha” and have at least 8 rum expressions that I know of. Made from sugar cane grown on Kauai, the rum has a delicious, sweet finish. Let’s countdown to Mai Tai day by enjoying a different recipe every day! 🍹 • Today we visit Maui to enjoy an delicious, layered Mai Tai. 🧡💛🤎 • This recipe comes from the Hāli’imaile General Store (hgsmaui). Don’t let the name misguide you, this is an award winning restaurant! The building is the original general store used since the 20’s, but has been a farm-to-table restaurant for over 30 years. I haven’t had the chance to visit myself, but I hear they also have another famous Mai Tai recipe called the “Tai Mai”. Hopefully I’ll get a chance to give that one a shake and taste one day. 🍹 • Cocktail: “Upcountry Maui Mai Tai” Glass: Footed Pilsner • Ingredients: .3oz / 10ml lilikói syrup 1.5oz / 45ml light rum .5oz / 15ml orange curaçao .5oz / 15ml orgeat 2oz / 60ml pineapple juice 2oz / 60ml guava juice .75oz / 22,5ml dark rum • Preparation: Combine orange curaçao and orgeat together and set aside. Fill glass with ice. Add lilikói syrup first. Add rum and orgeat/curaçao combination. Pour the pineapple juice along side of glass. Pour guava juice along side of glass. Float dark rum. Aloha! Let’s countdown to Mai Tai day by making a different recipe every day! 🍹 • Here’s a super fresh Mai Tai that is loaded with Hawaiian ingredients! 🏝 • A friend gave me a very ripe papaya recently (so ripe that I had to be careful when holding it!). I figured it needed to be used immediately for a drink! 🍹 • Since I had never made a Mai Tai with papaya juice, I decided that would be a good experiment. I even looked in my Mai Tai recipe book and didn’t find one featuring papaya. • Of the 8 ingredients in this drink, 6 of them were locally sourced. The papaya and lime came from trees in the neighborhood. The rum is from Kuleana Rum Works here on the island. The orgeat is that special macadamia nut version made by the geniuses at Hamakua Coast Premium. My trusty Hawaiian chili pepper water is homemade by a friend of mine. • The final ingredient is from a brand new distillery here in Hawaii called 12th Hawaii. They make spirits derived from pure honey. I am using their Distiller’s Reserve, which is their barrel rested product. They are so new that they have very little distribution. However, reach out to them if interested and they can ship to you. 📦 • Cocktail: “Spicy Papay Tai” Glass: Rocks • Ingredients: 1.5oz / 45ml Nanea aged rum @kuleanarumworks .5oz / 15ml Distiller’s Reserve @12thhawaiidistiller .5oz / 15ml orange curacao @de_kuyper_cocktails .5oz / 15ml fresh lime juice .5oz / 15ml macadamia nut orgeat @hamakua_coast_premium .25oz / 7,5ml velvet falernum .25oz / 7,5ml Hawaiian chili pepper water One half of a ripe papaya • Preparation: Scoop ripe papaya meat using spoon into shaker. Muddle papaya until smooth. Add all ingredients to shaker, fill with ice, and shake until chilled. Strain into glass with ice and garnish with mint sprig.
