Hi! I'm Micah, a Registered Dietitian Nutritionist and trained chef with a passion for sharing delicious and nutritious food with my base of dedicated followers.

With experience creating recipes that have been viewed, made, and enjoyed by 30+ million people, I’ve worked with some of the largest global food and nutrition brands to meet their high standards for quality to engage and grow their audiences. Additionally, I have personal mission for empowering the community at large to cook delicious food at home through my personal blog, NutritionxKitchen.

My philosophy is simple; nutrition starts in the kitchen. Food should be enjoyed, with others, with passion and care. Eat what makes your mind and body feel its best.

I have also written, illustrated and successfully published a children’s book on Diabetes and nutrition that is sold across North America, and am working on my first cookbook.

I'm currently loving the peaches at my local farmers market. If not peaches, things like watermelon, mango, fresh berries make for great salad toppers. Herbs are always a plus! 5️⃣ Don’t forget your protein and fat Protein and fat are essential parts of a healthy diet, but the sources are very important as well. Up close and personal with my Shawarma Spiced Sheet Pan Salmon- I made sure to zoom in so you won't have to 👀 While shawarma is traditionally made with lamb, chicken, or beef, which slowly turns and roasts for hours, we’ve put a simpler spin on a classic street food dish using flavorful spices like cumin, cardamom, cinnamon, and paprika, served atop roasted cauliflower and fresh vegetables, and tahini. Enjoy the taste of shawarma at home with this recipe for Shawarma Spiced Sheet Pan Salmon ✨ 👩🏻‍🍳Preheat the oven to 425F. Line a baking tray with foil. 👩🏻‍🍳In a small bowl, combine the spices, and olive oil into a paste. Divide in two halves. 👩🏻‍🍳Toss half of the spice paste cauliflower florets and red onion. Transfer to the baking tray, and roast for 20 minutes. 👩🏻‍🍳Remove the tray from the oven. Push the vegetables to one side and add the salmon. Spread the remaining spice paste overtop the salmon. Bake for an additional 8-12 minutes, or until the fish is fully cooked and flakes easily. 👩🏻‍🍳Top the salmon, cauliflower and red onion with pomegranate, chopped cucumber, tomato and parsley, a drizzle of tahini, and lemon wedges. To all the travel junkies out there- out of all the places you've been to so far, which country's food did you like best? For me, one country that comes to mind is Morocco 🇲🇦 It's a land of colorful wares, sunsets that will break your heart, and food that will make you come back for more. The spices and flavors used in Moroccan cuisine are incredible. Warm paprika, turmeric and cumin with mouth puckering preserved lemons - it's truly one of my favorite cuisines. Almost all dishes are made with the same collection of spices, but they all taste unique. It's pure magic. Inspired by my time in Morocco, I whipped up this delicious, warming Moroccan Spiced Cauliflower & Sweet Potatoes salad. First word that comes to mind when I think about soup? Comfort. It’s probably kind of weird to try and imagine a kid who loved soup- but that was me. I just really loved how a good bowl of warm soup can completely turn a bad day around. Still do, actually. Today, I'm sharing my newest go-to soup recipe: Cashew White Bean Corn Chowder. Add all of these aromatic ingredients into your favorite pot, and wait for the magic to happen! 👩🏻‍🍳Heat olive oil in a large pot over medium heat. 👩🏻‍🍳Add onion, garlic, carrots, and celery, cooking until the vegetables begin to soften, about 4-6 minutes. 👩🏻‍🍳Meanwhile, combine vegetable broth, soaked and drained cashews, nutritional yeast, and mustard in a blender until smooth. Pour over vegetables. 👩🏻‍🍳Add the bay leaf, beans, chickpeas, and corn. Bring to a boil, and simmer for 10-15 minutes until all vegetables are tender. 👩🏻‍🍳Top with parsley before serving. Enjoy! Opened your eyes and all that. You're welcome 😉 Next phase of the plan? Sharing this simple Broccoli Salad that has all of my favorite mix-ins, with a creamy and healthy tahini dressing. Perfect for all of your summer picnics ☀️ And guess what? This easy-to-make fresh salad comes together in a flash! 👩🏻‍🍳Preheat oven to 400F. Line a tray with baking paper. 👩🏻‍🍳Add sweet potatoes to the tray, drizzle with olive oil, salt and pepper. Roast for 15-20 minutes or until tender. 👩🏻‍🍳Meanwhile, combine broccoli, cucumber, apple, pumpkin seeds, and jalapenos in a large bowl. 👩🏻‍🍳In a jar, combine tahini, lime zest, juice, honey, mustard, and water, shaking to combine.
