When I learned that cooking with prunes isn’t in most people’s repertoire, I was shocked because growing up we would cook as many things as we possibly could with dried fruit. My whole family comes from Eastern Europe, where prunes are shoved into a zillion baked goods like coffee cake, rugelach and strudel, and also into savory meat dishes like braised chicken and brisket. They completely break down when cooked, adding natural sweetness, and they thicken sauces like a charm! Try these Moroccan-inspired braised Short Ribs (seen previously on my feed) for your next dinner party!!!

Holy cow it was cold on the East Coast! I wanted to make something super warming that would fill the house with holiday smells before we left to head home for LA, so I whipped up a Moroccan-style Braised Beef with Prunes and it was such a huge hit! The beef short ribs are cooked low and slow with onions, garlic, California prunes and spices, then served with couscous (or quinoa) and a few easy sides for a “set it and forget it” dinner party meal that will wow guests. Prunes offer an incredible depth of flavor to this dish as they break down during the cooking process to form the base of the aromatic sauce, yum! RECIPE Serves 5-6 2-2 ½ pounds bone-in short ribs 1 tablespoon salt ½ teaspoon pepper 2 onions, chopped 6 cloves of garlic, chopped A 1-inch piece of fresh ginger, grated 1 teaspoon ground coriander 1 teaspoon cinnamon ¼ teaspoon ground cardamom 1 teaspoon turmeric 1 teaspoon ground cumin 1 cup California Prunes 1½ cups Zinfandel or another full-boded red wine 3 tablespoons fresh lemon juice ½ cup slivered almonds ¼ cup pomegranate seeds ¼ cup parsley, chopped Pat the short ribs dry with paper towels and season with salt and pepper. In a large, oven-proof Dutch oven or other large pot with a lid, over a medium-high, sear the short ribs on all sides until golden. Set the short ribs aside. Lower the heat to medium-low and add the onions. Sauté until translucent and then add the garlic and ginger. Let the garlic and ginger soften for 3-4 minutes, and then add all of the spices. Cook until the spices are aromatic, 5-6 minutes. Toss in the prunes and wine, and turn up the heat to medium to cook off some of the wine. After about 20 minutes, turn the heat back to medium low, add the short ribs back into the pot, throw the lid on and set a timer for 1 ½ hours. When the timer goes off, use tongs to flip the short ribs and put the lid back on. Cook for another 1-2 hours until the short ribs are fork- tender. Stir in the lemon juice, and finish with the almonds, pomegranate seeds and parsley! This is really good right away, but even better on day 2!
