🀩 ⁠WHOLE30 DAY 20 🀩⁠ ⁠ Day 20 is a big mile-marker in my Whole30! I am 2/3rds of the way through - I can't believe it has already been 20 days since I started this round! It has gone by so fast. β πŸ€—β  ⁠ It has been over 3 years since I did my first Whole30 and I've done many subsequent rounds since then. It really has changed my life in SO many positive ways. ⁠ ⁠ My first round of Whole30 came with dramatic changes including learning cooking basics, understanding how food fuels me, completely changing my habits around food, a huge increase in energy, and dropping two pant sizes.⁠ ⁠ Now that I've done Whole30 many times, the changes are not as dramatic as that first round. BUT there are still changes. Every time I do a round, I learn so much about myself, create a better relationship with food, and get stronger in maintaining sustainable healthy habits.⁠ πŸ₯‘⁠ ⁠ Today I'm reflecting on some of the changes I've seen during this round of Whole30. Some of these non-scale victories include:⁠ - I can go in the kitchen and whip up an excellent meal for me and my family without a recipe⁠ - I am more confident⁠ - My family is SO supportive of me πŸ₯°β  - I don't feel like I need to nap every day at 3 pm⁠ - My clothes fit better ⁠ - I am sleeping better and waking up more easily⁠ - ⁠I am more productive⁠ - I feel stronger in my exercise routine and am more consistent⁠ - My sense of community has grown immensely through this page and my blog πŸ’— THANK YOU all for your love & support!⁠ ⁠ What are some NSVs you've experienced with Whole30? πŸŽ‰

Whole30 Day 18!!! & Food Boredom πŸ˜…β  ⁠ These past few days, I have been super lazy with my Whole30. Most of my meals have been leftovers or something super easy to pull together quickly. πŸ€·πŸ»β€β™€οΈβ  ⁠ Do I consider it a bad thing? No, not necessarily. The biggest concern I have with getting "lazy" in my Whole30 is that it becomes more likely I'll start to experience food boredom.⁠ ⁠ I'm now on Day 18 of my Whole30 and I can feel a little food boredom creeping in! This means that it's time to switch things up. 😎 ⁠ ⁠ There's definitely no reason that I should be bored with my food on Whole30! There are SO many options and recipes I have yet to try. πŸ€—β  ⁠ Stay tuned this week for some new recipes (and less pulled pork 😜)!!!

My number one Whole30 tip is definitely not a secret - KEEP IT SIMPLE πŸ™ŒπŸ» Don’t hold yourself to unattainable standards by trying to have the β€œperfect” Whole30 (because it doesn’t exist)! Don’t try to make a new recipe every day. Eat leftovers when you can. Lean on your staple meals. Switch it up just enough to keep things interesting! 😜 How do you keep things simple? ✨

WHOLE30 CREAMY MUSHROOM CHICKEN 🀀⁠ ⁠ Anyone starting #septemberwhole30 today?? I'm right there with you! Today is day 14 for me and I'm so excited to see all the September Whole30ers starting with the official program start date today 😍⁠ ⁠ Made this recipe for creamy mushroom chicken for the first time this week and it was SO GOOD. Definitely going in the rotation! ⁠ ⁠ The recipe calls for making it in the instant pot but I decided to make it on the stove. Happy Sunday, fam! Another day indoors here in Oregon, but throwback to a couple weeks ago when I went camping. Peep Diamond Lake in the back 😍⁠ ⁠ The day this photo was taken was my first day of Whole30. I'm now on day 13 - it's going by so fast! But it also feels forever ago that I started. πŸ˜‚ ⁠ ⁠ I brought this cinnamon swirl nutpods with me camping so I could have a nice morning cup of coffee on Whole30 day 1. Today my parents and I brought a haul of Costco goods to the evacuation center at Linn County Fairgrounds to give to the evacuees of the fires in Oregon. It was eye-opening to see how many people were displaced from their homes and staying at the fire evacuation site in my hometown. As much as staying indoors this week has been difficult, it’s nothing like what the evacuees are going through. I am grateful my family is safe. I am also grieving for the many families going through loss and for my home state of Oregon. In just the last week, wildfires have burned more than one million acres, which is twice the yearly average. I am thankful for the first responders for being true heroes to fight these fires and help those in need. The Red Cross is taking donations to help those affected by the Western Wildfires. πŸ₯“ EASY WHOLE30 AIR FRIED PORK BELLY πŸ₯“ ⁠ ⁠ Double-tap if you need more pork belly in your life! πŸ₯“πŸ₯“⁠ ⁠ Ann from @wooedbythefood gets full credit for this idea because up until yesterday I had no idea that you could air fry this pork belly from Trader Joe's! Thank you Ann for the hot tip πŸ€—β  ⁠ You can find this pork belly at Trader Joe's in the meat section. It's fully cooked so you can heat it up however you'd like- in the past I always fried it up on the stove, but air frying it is SO good and makes for a super easy cleanup! πŸ™ŒπŸ»β  ⁠ All I did was spray it with @primalkitchenfoods avocado oil, then I put it in the air fryer on 400 for about 15 minutes! I ended up cutting it up in slices halfway through because I wanted each piece to be crispy πŸ‘ŒπŸ» It was perfect! Happy Friday ya'll!

🌟 My Ultimate Whole30 Breakfast 🌟⁠ ⁠ I could eat this literally every. single. day.⁠ ⁠ 2 eggs fried in coconut oil topped with #everythingbutthebagel seasoning, 1/2 an avocado with sea salt, and roasted shredded brussels sprouts (made with avocado oil, sea salt, and pepper). πŸ‘ŒπŸ»β  ⁠ I like to prep a big batch of roasted brussels at the beginning of the week, then in the mornings all I have to do is fry the eggs which only takes about 5-10 minutes. πŸ™ŒπŸ»β  ⁠ On another note- The past couple of days have been strange because of the fires in Oregon. I am safe where I am at πŸ’— but there are many people who are being evacuated from their homes or struggling due to the poor air quality. Stay strong Oregon ❀️🌲
