Hi!! Been MIA recently. Typically I would say something like “but don’t worry I’m going to start posting a lot again just been busy,” but not this time! Truth is, I have a lot of other things going on in my life right now (all good!) that take priority over this account! Between adding a new job (you know who to call with your real estate needs😉), owning a home, and focusing on the quality time I actually get with my husband and family and friends, I just can’t justify prioritizing the time to post on here all the time. Just not the season for it.😊 I hope you all understand and I can’t thank you all enough for alllllll the love and support and happy messages and re-makes of meals over the years! I will probably get back into doing this more regularly, but not giving myself any type of timeline on when that feels right again! I may periodically still do recipe posts when I actually cook something pretty and worth sharing😂it just won’t be consistent! 😍HEALTHY PUMPKIN COLLAGEN MUFFINS😍 Absolutely my favorite baked good I’ve EVER made. These are so good. SERIOUSLY! And if you don’t have collagen that’s totally fine - but I would highly recommend getting some from @vitalproteins ! Great way to get in some extra protein that also helps your hair, skin, joints, and nails stay strong and healthy** A win/win☺️ Here’s how: Set your oven to 350 and get out your blender! Blend two cups of regular rolled oats until flour-like consistency. Put oats into a bowl and mix in 1/4 c of collagen powder (or 2.5 scoops), then add into your blender: one can of canned pumpkin, 1/2 cup of honey (or 3/4 if you like things sweeter), 2 eggs, one egg white, and 1/3 cup almond milk. Blend until smooth. Then add blender mixture into bowl with oat flour, mix together until blended, and add 2 tsp baking soda, 2 tsp cinnamon, 1 tsp pumpkin pie spice (or some nutmeg and ginger to taste), 2 tbsp flax seed meal (optional) and chocolate chipssss😍😍 Grease a muffin pan, add mixture, and bake for 20 minutes.
