busted out these new ~meal prep containers~ for a babysitting job tn! I ordered a few for my internship that starts next week since i plan on bringing lunch 🍴 and if you saw my story yesterday you know I’m the type of person that gets excited by the little things in life—in this case, cute glass containers & that perfect 🥑!! 💯🤩 packed allllll the leftover goods—steak, bell peppers, onions, cherry 🍅, 🥑, &, ofc, dessert—the very last of my healthy Twix 😩. already made a batch of new treats for this week which I’ll be sharing tmrw! ✌️

tonight’s dinner put a bit of a twist on your classic Memorial Day weekend grill-out ✌️🤪 after a long day that started in south bend & ended w a veeeeerrrryyyy hot 🥵 yoga class w my favorite teacher, this hit the spot!! cheers to the long weekend, friends! 🥳🥗😍☀️ • • • • chopped 🥗 mix w sautéed bell pepper & onion, marinated carne asada (courtesy of my dad), grilled pineapple & spring onion (also thanks to dad) & some guac to tie it all together 🤤🌈🥰

aaaaand back to egg posts! 🍳 put together this quick plate before heading back to the bend—yes, south bend!—for a hot minute for a family thing ✌️ chopped up some leftover asparagus from the other night & heated it up in a skillet w some onion & seasoning. paired it w 2 over-easy eggs & berries 🍓😍 hopefully this’ll tide me over til we’re back in Indiana...🤪

just in case things were getting a little *too* healthy around here—a biiiiiiig bowl of dessert 👉 a scoop of @nadamoo rockiest road + healthy Twix bar + whipped cream & 🌈 sprinkles = a very happy grace 🥳 might’ve had a second Twix bar on the side. Just sayin’. I know everything in moderation, but for me, I’m at my most emotionally stable w dessert after dinner...every night. All about finding that balance! 🍫😍🌸

deja vu, anyone?? 🥜🍫❤️ these copycat Twix bars might be a part of the weekly rotation this summer, partly because they’re so customizable!! aaaand because they’re hard to keep them in the house! made them this week with a ~peanut butter~ layer (can you tell from the PB in the background? I tried 🤷‍♀️)and they taste like upgraded Reese’s mmkay? but waaaaaay better for you! 🤤 chocolate, PB, & shortbread?? Yeah huh. Still mostly followed @rachaelsgoodeats recipe but I’ll list the deets for the PB layer below! 🤪🤗 no better way to kick off the week!! • • • • PB layer: 2 tbsp melted coconut oil, 1/2 c. @skippybrand natural PB, 4 tsp. @Tere asoul gelatanized maca powder, 4 tsp. @bobsredmill flax meal, 1 scoop @vitalproteins collagen, & 2 tbsp. honey

not another egg post, as promised 🤪 made this dinner to-go last night in literally 10 minutes before a babysitting job. used a salad mix base from @costco (their Mediterranean one I think?) and added these little flavor bomb cherry 🍅(also from Costco), Italian chicken sausage, sautéed 🥦, feta, & @traderjoes green goddess dressing. I also had packed 2 of my Twix bars but the family’s dog got to them before I could 😩 good thing there are plenty of leftovers! 🤗 happy Sunday friends!

ive realized my feed is very quickly turning into a series of pictures of eggs 🍳...I recently watched a YouTube video called “every way to cook an egg” by @bonappetitmag and I think this might be its Instagram counterpart 🤷‍♀️😂 anyways. Today’s post-long-Tun brunch was inspired by @choosing_balance egg nests! Hers were usually made w zoodles or spiralized sweet potatoes, but I used some leftover spaghetti squash instead and they were 💯 🤤. served 2 lil egg nests over some mixed greens w baby carrots & “cheesy” mashed avo 😍 happy weekend friends! promise I’ll try to space out the egg pics a bit more 🤪

nothing like a colorful brunch to brighten up a rainy Thursday 🌧 had the chance to catch up w one of my favorite people over one of my favorite meals from home—shakshuka from @eggharborcafe! if you’ve never tried this particular breakfast item, 12/10 would recommend!! it’s a spiced tomato sauce base w spinach and 2 eggs poached in it, topped w cilantro and goat cheese 🤤 don’t knock it before you try it! shake up your morning eggs, uk? 🍳🤪

LOOK 👏 AT 👏 THOSE 👏 LAYERS 👏 felt inspired to make something a lil sweeter today so I gave @rachaelsgoodeats healthy Twix bars a whirl and wOw. While I am all for “normal” sweets & treats, there is something fun about “healthified” homemade recipes uk? these Twix are GF, refined-sugar free, dairy-free, & vegan. I made them w @justins maple almond butter but I can already tell these would be to DIE for w peanut butter 🤤😍 bottom line—12/10 would recommend making these. What are you waiting for?

today’s lunch has me feeling like 😍😍😍. this is what I was missing! after so many months of (albeit pretty darn good) dining hall food, the chance to cook my own meals is amazing 🥰 today’s post-yoga lunch came together in all of 20 minutes and was sooooo tasty. I don’t think the pictures do it justice, tho, so you’ll have to take my word for it! The star of the show was this avocado “cheese” sauce (dairy-free!). • • • • lunch dEats 👉 1 c. leftover spaghetti squash sautéed w garlic, onion, & halved cherry tomatoes. I made two wells in the skillet and cracked 2 eggs in, seasoned everything w salt, pepper, basil, & oregano, and then covered until the eggs were cooked! the avo “cheese” sauce was made w 1/4 🥑, basil, oregano, garlic & onion powder, salt, black pepper, nutritional yeast, and a squeeze of lime juice 🧀😍

this dinner tastes like summer 🤩 busted out the grill for this Mother’s Day dinner. after a morning spent grazing on fruit and donuts, this hit the spot! donuts *could* become a go-to for pre-run eats bc I had my best run in a long time today! aaaaand we’re home for the summah!! ☀️ slept in this am and started off today w a lazy breakfast of 2 8-minute eggs, 1/2 an avo, & 1 c. of Costco stir-fry veggie blend. topped w lots of red pepper & EBTB seasoning—perfect fuel for unpacking the mountain of dorm shtuff in my room 🤪😩

keeping in suuuuuuuper simple for lunch today BUT with a diff mentality in building this meal!! this is because i met w a nutritionist this morning to talk through my diet and reevaluate things, and one of the changes she recommended I made was to increase the amount of complex carbs I eat. She challenged me to add one serving to lunch & dinner, so for lunch, i paired a small sweet potato w 2 (fried? Over-easy? Idk man) eggs, greens, & roasted cauli. I seasoned everything w garlic salt, chives, & pepper, and this def hit the spot on this incredibly rainy Monday 🤗🥦

while @ginger_snax_ ‘s bowl was much more ~aesthetic~ than what I ordered, I thought I’d still go ahead and share a new option for all you ND residents! it’s a bit out of the way, but my meal @eatgarbanzo was worth the walk, I’d say 🤩 picture here is a tossed salad w a grilled chx kabob, peppers, pickles, feta, sautéed veggies, & tomato-cucumber salad. the best part is they give you a falafel while you wait in line! If you’ve got flex points left to spend, I’d recommend checking it out!
