I'm Nicki Sizemore, a food writer, recipe developer, video host and educator. My mission is to help busy families get fresh, wholesome and downright delicious food on the table any night of the week. All of my recipes are naturally gluten-free.

I'm the author of Fresh Flavors for the Slow Cooker: Reinvent the Slow Cooked Meal (Storey Publishing, 2019), Build-a-Bowl: 77 Satisfying & Nutritious Combos: Whole Grain + Vegetable + Protein + Sauce = Meal (Storey Publishing, September 2018); and The Food Processor Family Cookbook (Sonoma Press, 2016). I'm also a contributor to Parents and Fine Cooking and am a video host and instructor for NBC Universal's streaming platform Bluprint. In addition, I appear regularly on the PBS series, Moveable Feast. My work has been featured in publications such as The Washington Post, Eating Well, AllRecipes Magazine, Parade and Taste of Home.

While I'm a trained chef and graduate of the French Culinary Institute (now called the International Culinary Center), I also have two young daughters and know first-hand the challenges of feeding our families (and picky kids)! I hope to help help alleviate some of that pressure, offering vibrant, flavor-packed and adaptable recipes that will appeal to all eaters at the table. After discovering that I had to cut gluten out of my diet after my first daughter was born due to a severe allergy, I also understand how tricky it can be to accommodate food restrictions. All of my recipes are naturally gluten-free and many can be adapted to satisfy other allergies or diets.

EASY Gluten Free Carrot Cake Muffins (Paleo Option)

The muffins are made with a base of almond flour and coconut flour, making them gluten free and grain free. I use Bob’s Red Mill almond flour and coconut flour, since they’re easy to find, affordable and reliably fresh. These healthy, naturally sweetened carrot cake muffins are gluten-free, grain-free, and are packed with carrots, but who cares, because THEY TASTE JUST LIKE CARROT CAKE! Pan Seared Cast Iron Pork Chops w/ Easy Pan Sauce

If you’re looking for PERFECTLY COOKED pork chops, then this cast iron skillet recipe is for you. Heat ghee or vegetable oil in a cast iron skillet over medium-high heat (I love the flavor of ghee, but you can use oil if you don’t have it). It will take about 10-12 minutes (give or take) to cook 1 inch pork chops in a cast iron skillet on the stove. If you don’t have one, you can use a stainless steel skillet (it’s best to use a heavy pan that will maintain even heat–avoid aluminum pans or lightweight non-stick pans).

Spanakopita Spinach Tart with Feta & Ricotta

It features a buttery, flaky crust (which can be made gluten free!) and a sweet and savory spanakopita-inspired filling. The foolproof pie crust is made with either Gluten Free Cup4Cup Flour or regular all-purpose flour (meaning you can make a gluten free spinach pie, and nobody will have a clue). You’ll only need half of the recipe (one 9-inch crust), but it’s best to make the full recipe and freeze the other half for down the line The dough recipe makes enough for 2 galettes, but you can freeze half for down the line or use the second crust to make a strawberry galette or apple galette!

Glazed Lemon Olive Oil Cake Recipe (Gluten Free)

The simple tea cake gets a triple dose of lemon flavor from lemon zest, lemon juice and a 2-ingredient lemon glaze (oh swoon). The cake is made with just Bob’s Red Mill Super-Fine Almond Flour and Bob’s Red Mill Medium Grind Cornmeal, making it naturally gluten free. In a separate bowl, whisk together eggs, milk, extra virgin olive oil, sugar, lemon zest, lemon juice, vanilla extract and almond extract. Baked lemon slices are an easy (but optional) garnish, or you can try these candied lemon peels (from this lemon pie recipe) instead!
