Caramel Cake (Salted Caramel Cake)

After crumb coating the cake and chilling it for 20mins, I frosted it like any cake except that I used way more frosting on the sides than I normally would. Once the cake was frosted and smoothed, I placed the cake comb up against the cake, pressed in a bit, and spun my turntable. If I were making this a Salted Caramel Cake, I would sprinkle some sea salt over the top of the decorated cake once the drips have set. For the texture on the sides of the cake, I used the right side of the middle cake comb from this set.

Lime & Coconut Cake

The lime & coconut cake layers baked up without issue, and I made my favourite Swiss Meringue Buttercream to go with the cake, flavouring it with a good bit of coconut milk powder. The coconut lime cake layers are delicious on their own, but get taken to a whole ‘nother level when paired with the best lime curd and coconut buttercream you’ll ever have. My lime curd uses whole eggs, but if you have a yolk-only lime curd recipe that you love, feel free to use that instead. Baklava Cake

A sticky sweet baklava sandwiched between two delicious honey walnut cake layers covered with a honey cinnamon buttercream. I was hoping I could just press the cake ring through the filo to cut it, but that wasn’t going to happen, so a regular cake pan would work as a guide too, or even a 6″ cake board. Unfortunately, when I was cutting the cake for pics, I didn’t really think about where I was cutting it, and ended up having the crappy patched area positioned right in the front of the cut cake pics. If you’d rather skip making the baklava layer but want three 6″ honey walnut cake layers, 1.5x the cake recipe.
