one of my journal prompts this morning was to sum up january in one word and all i could think of was 'rollercoaster'🤪😂 there were some high highs and low lows, but all in all i'm grateful for a fresh start & confident february will better💕 as for my intentions, i'm going strong with the reading (my mental health is worlds better!!) but could use some re-focusing otherwise🙏🏻 what are your goals & plans for this month?!
idk why, but muesli makes me feel like i'm on vaca or something...maybe because i first had it at a hotel breakfast buffet😂🍯 i make mine with almond milk + yogurt then let it sit for about 10 min before adding toppings!🥄 also the bags of frozen berries from costco are a game changer🍓🫐 (i generally use @bobsredmill muesli & for honey i've been loving the superfood daily honey packs from @youagainfoods)

romanticize your breakfast✨ i have a smoothie at least 5/7 days a week (they're basically milkshakes, i can't resist!), which means it's nice to make them fancy sometimes💁🏻♀️ and just trust me on the zucchini, okay? i use 1/2 a raw, peeled one purely for extra volume/nutrients/creaminess and i swear you can't taste it with all the other ingredients - it'll keep you full for longer, too🙌🏼 PB & J SMOOTHIE 1/2 frozen banana 1/4 cup frozen mixed berries 1 large handful spinach 1/2 raw, peeled zucchini 1 scoop protein 1 tsp maca 1 tbsp powdered pb 1-2 cups almond milk (and/or water) 1-2 tbsp nut butter for the glass BLEND all ingredients except the nut butter, then SPREAD it along the inside of the glass before pouring in your smoothie!

We listened to audiobooks almost the entire time, stopped in Utah for the night on the way there, pulled off on the side of the road to admire the rock formations, and stopped in a little town in CO called Grand Junction for awesome tacos. We cooked more instead of dining out (I share more of my favorite spots in Breckenridge this post and this post!), but were able to grab takeout from our favorite spots like Giampietro’s for pizza, Mi Casa for Mexican, and Clint’s for coffee! Though it was bittersweet to leave (the week went by too quickly and it’s my favorite place), we planned our stop on the way home to be in Vegas instead of Utah so we could do some exploring. I’m not sure if this is the case when we’re not in a pandemic, but we had to buy “tickets” online in advance and choose a specific time!
These cookies were actually the result of a partnership I had for an Instagram post – I love working with amazing brands on recipes because it really pushes me out of my comfort zone and almost forces me to try new things!! 1 cup cassava flour 1/2 cup almond flour 1/2 tsp baking powder 1 tsp each nutmeg, cardamom, cinnamon, ginger & cloves 1 flax egg (1 tbsp flaxseed, 2 1/2 tbsp water) 1 tbsp vanilla extract 3 tbsp almond milk In a small bowl, whisk together the coconut oil, sweetener, flax egg, vanilla and almond milk.
As I’m navigating it all, I’ve had to take a step back from this blog because after many 12+ hour days staring at my laptop and phone, I’ve mostly just been wanting to check out and turn off my brain entirely! It’s tough when most of my life is social media (both my full time job and side hustle), but I’m learning to spend any free time I have doing anything else. I’m trying to remind myself that I have a right, just like everyone else, to take time off and not be on email 24/7! I’ve realized that the only person putting that pressure on myself to post on Instagram everyday, write on this blog, post YouTube videos, make Tik Toks and all of these other things is me.
I haven’t even taken a beat to reflect on all that’s happened in the last few weeks – personally, professionally, in the country and in the world! I feel like 2021 is honestly looking up and while we still have a ways to go before things start to feel I’ve taken the pressure off myself when it comes to this blog and my social media, and that’s turned it back into an outlet where I can share freely, create, write, and ultimately, just enjoy! Ok I know this is a bit of a splurge, but you can usually find Pressed doing some kind of sale and when you do, please get their almond milk and put it in your coffee.
