I was pretty excited when the eye doctor told me my eyes have improved! It has been on my mind, and I want to work on it and see how I can improve them without surgery. Castor Oil - penetrates the deepest and is known to heal cataracts, prevent glaucoma, etc. While you’ll be hard pressed to find an eye doctor who tells you castor oil will help your vision, I’m not the first person to say their eye exam went better than expected! Eye Exercises - these can help strengthen your eyes. Just like you work on your arm and leg muscles, your eyes need it to! I notice lots of things…and definitely when I talk about health. People tell me they want to get healthier, but do they really? There are lots of people who actually do, and I would love that number to grow, but most just can’t let go of those things they “love.” Whether it’s comfort, it’s coffee, it’s sugar, it’s smoking, changing sleeping patterns…whatever it is. Morning reflection: We are ALL capable of becoming healthy. Convenience has killed a desire to do more than we have to. The thing to remember: you don’t have to change everything at once, pick one at a time and then keep going. It’s taken us years to get to our current health status. Canning can seem overwhelming, but once you go through the process once you will be comfortable canning anything! And let me remind you, I’m doing this in our apartment - so don’t feel intimidated! One of the rules of canning: if you are canning a hot food, your jars need to be hot and the water in your canner needs to be hot. If you are putting something cold in your jars, unheated jars and unheated water. The amount of pressure you use to can is based on your elevation. We are 1,000 ft or less above sea level, therefore I can with 10lbs of pressure. PART 1 This is one of my favorite things to can, and have on the shelf! It’s dual purpose (chicken pot pie filling OR chicken soup), which is why I love it lol Normally you add a thickener to chicken pot pie filling. When I can it, I do not add it until I open the jar and decide I’m using it to make pie. That way, if one of us isn’t feeling great, we can use it for soup instead. How to thicken this? Just add arrow root powder and it will thicken in no time 👍🏼 Why is having this canned as soup so great?? Because when you’re sick who wants to cook?!? And there’s nothing better than homemade chicken soup when you don’t feel good 🥰 I don’t follow a recipe for this…I eyeball my ratios. So if you like more meat or more veggies, feel free to add more or less. This is the protein bread I shared in my stories that so many of you wanted to know how to make. There are other recipes (and some even include 12 egg whites 😳) but this one has become my staple. 1 1/2 cups egg white protein powder 1/4 inulin or allulose powder (totally optional) 1/2 tsp cream of tartar 1/4 tsp salt 1 1/2 cups water 3 egg whites Put your dry ingredients in the mixer and give it a mix. Then add your egg whites and water and mix on high until you get stiff peaks. Pour batter into avocado oiled pans (grease really good or it will stick) and bake at 325 F for 30 minutes. I have made this with and without the inulin powder. The two main differences: the bread tastes slightly more eggy without the inulin and the top doesn’t quite brown. Neither are a big deal and if I don’t have inulin or allulose on hand, I just skip it. Let me know if you try this bread out! We love roti in our house (if you don’t know, my husband’s family is originally from Pakistan and my hubby cooks the food often 🥰) We use these as tortillas too and he makes burritos, so whether you want it to dip in or use it wrap with, take your pick! 2 cups flour (regular or gluten free) 1 tsp salt 3/4 cup milk 3 1/2 tbsp melted butter or ghee (Extra flour for rolling) Put all ingredients in a pan, form a dough, break out into 8-10 pieces based on size, roll out your dough, cook for a few minutes on each side, put some butter or ghee on and cover until you cook them all. These are a hit in our house! After seeing all the junk ingredients in products, I decided to buy the tools to have for a lifetime and make my own with minimal and clean ingredients. You can make these gluten free…or not. I’ve made this recipe both ways and it works great no matter which you choose. We don’t use white sugar in our house, but if you don’t have coconut sugar you can absolutely use white sugar and it tastes just as amazing 🥰 1 whole egg 1 egg white Pinch of salt 1/2 cup sugar (coconut sugar or white sugar) 2/3 cup flour (regular or gluten free) 2 tbsp melted butter, cooled Enjoy fresh, homemade waffle cones whenever you want now! No joke, it’s perfect 🙂 Seriously, we have made SO MANY cookies…and because of a lack of ONE ingredient, we ended up with a bit of an unconventional method. These chocolate chip cookies have a slight crunch on the outside and a super chewy inside, melted chocolate and all! Almost every time I have made chocolate chip cookies, the recipe calls for brown sugar.
